What can I make with this huge Salmon filet?!


Question: Accidentally thawed out my Salmon......I dont have a gas or charcoal grill. What can I do to cook this thing. I have Olive Oil, garlic, rice, wine, etc..... should I bake it? Cook it on a skillet? What?

Season it, put a little butter and maybe some white wine or lemon or both. Make a pouch with parchment paper and bake it in the oven.

I just bake mine in the oven. I put either butter or olive oil on top and throw some garlic on top. It's tasty served with a little bit of rice and asian chili hot sauce.

Poach it in the oven with all of those ingredients(except the rice, make that separate)

I'd bake it in some foil with onion slices, apple slices and fresh basil on top. It sounds weird but a friend from Seattle gave me ther recipe and it's AWESOME!

Bake it.

If you can. Run to the store and get:

mayonaise
asian seasoning (common seasoning)
asian ginger vinegarette (salad dressing)

Mix the above-each of equal amouts. Place your fish on a baking sheet, and pour sauce on your fish. Bake @ 350 until cooked through (usually takes about 10 minutes) but if your fish is HUGE, add more time if needed.

Soy sauce is optional. A dribble (literally...not to much) ontop cooked fish.

I PROMISE YOU. IF YOU MAKE THIS, YOU WON'T BE NOT SATISFIED :) KIDS EVEN ENJOY IT. IT'S FULL OF FLAVOR AND BRINGS OUT THE GOOD TASTE IN FISH.

SERVE WITH WHAT YOU WANT. RICE IS FINE. BY ITS SELF IS GREAT TOO!!

B and B Salmon (Bake and Broiled)

Press the garlic-about 3 tablespoons worth. Oil the fillet on BOTH sides with the Olive oil. Add some black pepper and salt to taste. Preheat the oven to 350 degrees.
In a metal pan, on cookie sheet or whatever you have, make a Aluminum foil "bowl" by folding the edges of the foil up on all sides to not allow juices to run out onto the pan. Place the fillet on the foil in the pan and insert the pan in the oven. I am assuming that you have a 3 inch thick or greater thickness fillet that will need to cook on the inside prior to broiling. Bake for about 15 minutes. Remove pan, spread the garlic evenly on the fillet (use the nicest looking side for presentation purposes) and place under a low heat broiler for about 10 minutes. Watch it carefully so it does not burn. The garlic will taste foul if it gets too hot and burns. Remove form oven and enjoy! If you have leftovers, make sandwiches tomorrow using your favorite Tuna salad recipe on toasted bread, but be sure to make certain all of the bones are picked from the leftover fish first.

Cheddar cheese and parsley add to the color and taste of these flavorful patties.

INGREDIENTS
14.75 ounce salmon, skillet grilled with oil and flaked
1 small onion, minced
1 egg
1/2 cup fresh bread crumbs
1 tablespoon Worcestershire sauce
1/8 teaspoon hot pepper sauce
1/4 teaspoon ground black pepper
1/4 cup shredded Cheddar cheese
2 tablespoons chopped fresh parsley
2 tablespoons all-purpose flour for coating
1/4 cup butter
3 tablespoons olive oil




DIRECTIONS
Combine salmon, onion, egg, bread crumbs, Worcestershire sauce, hot pepper sauce, black pepper, cheese and parsley; mix well. Shape into four patties. Dust lightly with flour. Chill for 20 minutes.
In a large skillet heat butter and olive oil over medium high heat. Cook the patties until browned on both sides, about 10 minutes. Drain briefly on paper towels before serving.

You could steam the salmon & make a lemon-butter sauce on the side

Or sprinkle the salmon w lemon (or lime) juice & dill, if you have it.

You can bake it or pan fry it with clarified butter. I prefer baking because although it takes a little more effort, it generally turns out better that simply frying it..

If you bake it, try a marinade first. If you're doing just a filet, use the following:

Juice from one lime
1 clove of garlic, finely diced, (Tiny Tiny pieces)
2 tablespoons of canola or olive oil
salt and pepper to taste
2 tablespoons of red wine vinegar
1 tablespoon of freshly diced parsley

Mix the ingredients in a bowl and soak both sides of the filet. Use plastic wrap to cover the bowl, and refridge for an hour. You don't want to overdo this because the acid in the vinegar and the lime will break down the fish if you leave it in too long.

Preheat your oven to 350. Use a skillet or frying pan. A cast iron pan works best. Coat with butter and get it HOT. Place the salmon in and sear both sides. Don't over do this. No more than a minute if the pan is hot. Once both sides have been seared, remove the fish and place it in a buttered baking pan and cook for 5-10 minutes at most. If you do use an iron frying pan, you can put the pan and fish straight into the oven - less dishwashing is always a good thing.
