Surimi is the red and white imitation crab that you can get at the store. Sometimes they sell it in the deli, but you can get it for sure in the seafood section of the meat dept. Doesn't taste like crab, but it is good. It is usually made from a white fish. TONS of protein.

Astrid is correct. the Sodium polyphosphate is used be fishers of scallops to soak the scallops in to make them absorb lots of water. This makes them weigh more and therefore sell for a greater price to the wholesaler. This is common in Alaska fisheries. If you cook scallops and they excrete lots of water into the heated pan-Guess what? Part of that liquid is Sodium polyphosphate.Best to find a better supplier of dry scallops.
