Corned Beef Hash and Eggs

**triple-tested at the Good Housekeeping Research Institute**

INGREDIENTS
1 tablespoon(s) margarine or butter
1 large red pepper, chopped
1 large onion, chopped
4 cup(s) (about half 32-ounce package) frozen hash brown potatoes, (southern style)
8 ounce(s) deli corned beef in 1 piece, cut into 1/2-inch chunks (about 2 cups)
4 large eggs
1/8 teaspoon(s) salt
1/8 teaspoon(s) ground black pepper

DIRECTIONS
1. In nonstick 12-inch skillet, melt margarine over medium-high heat. Add red pepper and onion and cook 10 minutes or until vegetables are tender, stirring often. Stir in frozen hash browns and corned beef; cook 10 minutes or until hash browns are lightly browned. Spread hash evenly in skillet. Reduce heat to medium-low.
2. One at a time, break eggs into cup and slip into skillet on top of hash. Sprinkle eggs with salt and black pepper. Cover skillet and cook 5 to 8 minutes or until eggs are set or cooked to desired doneness.

1lb potatoes (grated)
200g Corned beef
1 onion finely (chopped)
2 cloves of garlic (crushed)
2 eggs
wostershire sauce (splash)

mix all of the ingrediants together seperate into 4 different cakes and slowly fry till cooked through yum yum!

Toms chop house in Manchester does the best cornbeef hash in the world it's the speciality of the restaurant and is excellent here's the recipe.

Making your own corned beef
1.25kg beef brisket in apple sized chunks – note: it will reduce in volume
900ml corned beef marinade
Marinade
8gm saltpetre – probably from your local butcher
40gm cooking salt
12gm soft brown sugar
1ltr water
Place all the marinade ingredients into a pan and bring to the boil for 10 minutes. Take it off the heat and allow it to cool.
The hash mix
700gm corned beef – ideally home made
400gm new potatoes
1-2 medium Spanish onions (80gm)
200ml whipping cream
8gm chives
8 rashers smoked Cheshire dry cure back bacon
4 free range eggs – size 3
80gm unsalted butter

Corned Beef Hash Recipe

Ingredients

Canned Corned Beef
Frozen Hashbrowns
Salt or Seasoning Salt
Black Pepper
Olive Oil

Directions

In a frying pan, heat up the olive oil and fry up your frozen hashbrowns about 4 cups. Season with Salt/Seasoning Salt and Black Pepper to your liking.
When Hashbrowns are done or close to done cooking add the can of Corned Beef..stir until the Corned Beef is heated thoroughly.
Serve Up with Eggs Over Easy!

Cube and boil 1lb potatoes in salted water.
Roughly chop 2-3 onions
Roughly cube 1 tin corned beef.

When the potatoes are boiled, let them drain in a colander and begin to fry the onions in a little olive oil.

After 2-3 minutes, add the potatoes and corned beef and fry them until the whole wonderful mess starts to go crunchy

Eat with Heinz baked beans.

This is a favorite it my home. Serves 2

Peel, dice and boil two large potatoes. fry 1 large chopped onion with 1 clove crushed garlic and 1/2 teaspoon Garam Masala. Dice a tin of corned beef and add to frying pan. Fry until the corned beef has broken down. Drain potatoes and add to frying pan. Mix well and season with fresh black pepper. Serve with a fried or poached egg on top.
