Does anybody know what hokey pokey is and how to make it?!

Hokey Pokey is basically a peanut-free peanut brittle. Here's my great-great grandmother's recipe for it, it's been passed down for generations. We use the microwave instead of the stove, though, it's faster and is less likely to burn.
5 TBS sugar
2 TBS golden syrup (or corn syrup, although it won't be true hokey pokey... look in specialty shops for real golden syrup)
1 tsp baking soda (bicarbonate of soda)
Bring sugar and golden syrup to the boil slowly in a large heavey saucepan, stirring all the time as it will burn easily. After it starts to foam up, simmer gently over a very low heat for 4 minutes, stirring occasionally and still watching it carefully. Remove from heat and add baking soda quickly until it foams up and pour at once into a greased pan or onto a piece of aluminium foil with the edges turned up.

Break it into bits when cold and store in air-tight jars. Be sure to save all the crumbles so that you can top your ice cream with them to make Hokey Pokey Ice-cream.

I just stick it in the microwave for 6 minutes, stirring after every 30 seconds.

My husband is always asking me for hokey pokey, only thing is, we don't, "Make," it. We more sort of, "Do," it.

By the way, ignore the link to Wikipaedia above, the info is wrong. Hokey Pokey is not a dance similar to the Hokey Cokey. The Hokey Cokey is a dance. Many mischievious people post incorrect information on Wiki.

really creamy ice cream (i think it was vanilla) with caramel running through it and chunks of homeycomb!

Hokey Pokey is similar to what we call brittle in the U.S.. We add about a cup of peanuts or other nuts when the baking soda is added.

Yeah honeycomb - hokey pokey icecream is very popular in NZ, it's the best! Tiny balls of honeycomb in rich vanilla icecream... so good!
