Get a jar of chunky salsa, hot, mild, , or medium, and cook the chicken breasts in that salsa. If you have Cumin, you can sprinkle a little on just before the chicken is cooked!

INGREDIENTS
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

Hawaiian chicken. Flatten out the chicken breast a little bit. Put a piece of ham on top, some cheese and some pineapple. Roll it up so the contents are secure. Coat in bread crumbs and bake in the oven. They are really good. You can change the recipe too. Add tomato or avocado, etc. You can basically put in anything that you like.

you could boil up the chicken in some chicken stock, add some chopped cilantro and a quartered onion a bay leaf and a palm full of cumin to make a mexican flavored chicken mixture. This method is good to use for pork, chicken, beef or any other meat to add a latin flavor to it. This is obviously a method and not a recipe, you can find the recipe for carnitas on www.allrecipes.com and it has the full directions, I do it for all kinds of meat - makes great tacos, enchiladas or burritos.

bake the chicken filets in the oven with either fresh salsa on them or the one in the jar. sprinkle some mexican shredded cheese on them and a squeeze of lime juice

lightly dip the chicken breasts in a bit of egg and then roll them around in a bit of flour and breadcrumbs, or you can lose the breadcrumbs and just dip the breast in flour and egg and fry it in grapeseed or extra virgin olive oil in a pan on the stove. delish

Easy Baked Chicken Parmigiana

2-4 chicken breasts
2 cups spaghetti sauce (your choice in brand or flavor)
breadcrumbs
1 cup shredded mozzarella cheese
parsley
grated parmesan cheese
spiral noodles

1. Coat chicken breast with bread crumbs until fully coated. Bake 1 hr at 425-450°F, depending on you oven in 9x13" baking dish.
2. While chicken is baking, boil noodles until tender. drain and set aside.
3. When chicken is done, remove chicken from baking dish and set on plate.
4. Put cooked noodles in baking dish and place chicken on top of noodles.
5. Sprinkle Chicken with parsley to taste and a bit of grated parmigiana cheese.
6. Smother chicken with spaghetti sauce and cover some noodles if desired and top with mozzarella cheese. As much as you like.
7. Place baking dish back in oven and bake until cheese is melted.
8. ENJOY!

Bake them with barbuque sauce for like 20-30 mintues or maybe 50..

Take a stick of butter melt it, add 1-2 cap fulls of regular vinegar (to taste), add 1/2 bottle (12 oz or so) of Chalula hot sauce. (Tapatio, or Franks whatever you have) stir over medium heat.

slice the chicken breast into strips and fry (breaded or not).

Stir chicken into the sauce, serve with rice or wedge fried potatoes.

Buffalo Chicken is good.

Cheesy Chicken Pasta.
Chicken.
Poach your chicken pieces in some stock and set aside, until cool enough to handle, and de-bone.
Pasta.
Place in salted boiling water and cook until you get the degree of cooking you like.
Penne or Elbows will do very well here.
Sauce.
Make a normal white sauce and add some grated tasty cheese, remove from heat and stir until it is smooth.

Combine everything and place in an oven proof dish, sprinkle with more cheese and bake until it is bubbling and the cheese has melted and started to brown.

My favorite is Cordon On Bleu. Chicken fajitas or quesdillas are always a hit at my house.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3-4 chicken breasts, cubed
1 large cucumber
1 onion, sliced thin
1 tsp. ground cumin
1 tsp. ground mustard
4 cloves garlic, minced
1 cup chicken stock ( 1 cup water and 1 chicken boullion cube works too)
1 cup sour cream
1 1/2-2 cups cooked rice

Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Return chicken to pan, stir. Serve cucumber and chicken sauce over rice.
