Amish Bread also known as Friendship Bread

Here is a recipe that makes two loaves of Amish Friendship Bread
without the starter. I used to make the recipe with the starter but
it was just too much. This tastes exactly like the one using the
starter but so much easier.

AMISH FRIENDSHIP BREAD

1 cup vegetable oil
1 1/2 c. sugar
1 tsp. vanilla extract
3 large eggs
1/2 tsp. salt
2 tsp. ground cinnamon
2 1/2 c. white flour
1 1/4 c. milk
1/2 tsp. baking soda
3.5 oz. box instant vanilla pudding
1 1/2 tsp. baking powder
1/2 c. walnuts, chopped

Mix first six ingredients together. Combine remaining dry ingredients
together including the walnuts. Alternately, add the dry ingredients
and the milk, to the wet mixture, mixing thoroughly. Preheat oven to
325 degrees. Grease two loaf pans. Make a cinnamon/sugar mixture by
combining 1/3 cup sugar and 1 teaspoon cinnamon. Sprinkle this
mixture to cover the bottom and sides of pan. Save some for the top
of the batter. Pour batter evenly into the two pans.
Sprinkle
cinnamon/sugar mixture on top. You can also sprinkle some chopped
walnuts on top, press lightly into top of batter. Bake for one hour.
Cool about 15 minutes. Remove from pans to cool completely and enjoy!

This also freezes well (if there is any left!) Completely wrap loaf
in plastic wrap then tightly wrap in foil. Thaw in refrigerator.

AMISH FRIENDSHIP BREAD

1 cup Amish Friendship Bread Starter
2/3 cup oil
3 eggs
2 cup flour
2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoons salt
2 teaspoons vanilla
1 1/2 teaspoons cinnamon
1 cup sugar

Preheat oven to 350°F.
In mixing bowl, combine all ingredients.

Grease and flour well 2 9″x5″ bread pans. Bake for 40 to 45 minutes.

Variations: Add 1/2 cup of one or more of the following - raisins, chopped apples, crushed pineapple, candied fruit, coconut, chopped dates, nuts or chocolate chips. Add to batter just before baking.
