make sure the chicken is well cleaned and DRY. I use a great mixture: I grind a handful of dry almonds in a coffee grinder; until they are like a coarse flour; and then combine that with a very find granola flour

dip the chicken in nonfat milk; then in the flour; then in the milk and then back inthe flour;

coat a roasting pan or cookie sheet with butter or olive oil, or a combination; place the chicken on the pan and cover with a tent of aluminum; poke holes in top to let steam escape

bake for 15 minutes at 350 degrees; remove the foil, turn the chicken over and bake another 15 minutes. If the chicken is done, and not pink, it is ready to eat.

you have to gage the doneness yourself. I love this recipe but we each have our own tastes. good luck

There are several different ways, but this is how I make mine:

Coat with ranch or Italian dressing

Then coat in a mixture of flour, a little pinch of cornmeal, and salt and pepper to taste.

Bake on foil lined cookie sheet until thermometer reads 170

my sister in-law makes them this way...and they come out great...

coat them with oil and then roll in seasoned breadcrumbs (the kind with cheese) and bake.

You buy progresso bread crumbs in the baking isle
Get a bowl crack an egg in it
Get another bowl pour the bread crumbs in it with 2 tablespoons of melted butter
Dip the chicken in the egg bowl then roll it in the bread crum bowl
Bake for about 40-45 min on 350.
It tastes so good.

Bake at 375°F. for 1 hour or until the chicken is cooked through.* Serve immediately or let stand 30 minutes to serve at room temperature, using the pan juices as a dipping sauce.

*The internal temperature of the chicken should reach 170°F.

Swanson Kitchen Tip: This recipe is also great using Swanson? Natural Goodness? Chicken Broth or Certified Organic Chicken Broth in place of regular chicken broth.

Campbell's Kitchen Tip: Keep disposable aluminum foil baking pans on hand for convenience to tote casseroles to friends' parties or covered dish suppers. As a safety reminder, be sure to support the bottom of the filled pan when handling them in and out of the oven.
