I need some different recipes for omelets......?!


Question: have you ever tried these? I tried them last weekend and they are easy and you can do like an omlette bar so everyone can add what they like
Omelette for a Crowd

6 large eggs
Salt and freshly ground black pepper
2 to 3 re-sealable plastic freezer bags
Add-Ins (all are optional):
Shredded Cheddar
Crumbled feta
Shredded mozzarella
Cooked and crumbled bacon
Cooked and crumbled sausage
Diced ham
Chopped bell peppers
Chopped spinach
Diced red onion
Diced tomatoes
Sauteed sliced mushrooms
Sliced black olives


In a medium mixing bowl whisk together eggs, salt, pepper and any of the desired add-ins. Divide and pour the egg mixture into re-sealable plastic bags.
Boil a large pot of water and drop in the sealed omelette bags. Simmer the bags for 5 to 8 minutes. Remove bags from the water with tongs and drain them on a paper towel lined plate.

Allow to cool slightly before handling. Open the bags and pour the cooked omelet out onto a plate.

Think what you want more, fish, sausage, bacon, ham....sharp cheddar, mild cheddar, provolone, swiss...onions, mushrooms, green peppers, red peppers, spinach, asparagus...what do you want in an omelet?

Make one like Perkins does. Tons of veggies, ham, sausage, and cheese. But then fry up some hashbrowns with cheese and put those in the middle before folding it over. I so miss their Granny's Country Omelettes.

Another good one I loved from a truck stop. Put taco meat and cheese in the middle and put a creamy salsa over the top. Great 2 a.m. breakfast after work!

Mix a couple of spoon fulls of cream cheese in with the eggs and a dash of milk. I like to cook this omelette and then wrap a couple of piece of warm bacon inside. The cream cheese makes the eggs really creamy and yummy! Works good for scrambled, too.

try a Fritatta, its basically an italian version of an omelet. They have yummy recipes on Foodnetwork.com

a recipe for an omelette the one I learned in College is pretty easy and as follows

2 large eggs
1 oz water

whip eggs and water to increase their volume with a wire whip
heat pan
add 1 tsp oil to HOT pan
add desired fillings (except cheese)
after fillings are cooked add whipped egg
cook 1/2 way
add cheese
fold
lower heat
cover
serve when cheese is melted

My favorite is with potatoes, onion, ham, sausage, green chili's and cheddar cheese.

Listen carefully:: My fav is 3 eggs beat & place in a oiled electric wok,ater the eggs begin to set add homemade mexican salsa,jalponea,cheese,onions,chopped bell peppers,hasbrown,black olives,fresh garlic,cilantro,chopped boiled ham,sasuage,.Slide this out of the wok ont a platter & as you do this fold it & you will have a perfect mexican omelet.Serve this fresh homemade salsa,sour cream & nice warm soft tortilla.I gaurantee you will love it.

CHEDDAR OMELET

4 eggs, separated
3 tablespoons water
1/2 cup mayonnaise
2 tablespoons butter
1 cup cheddar cheese, shredded
salt and pepper to taste

-Preheat oven to 350F degrees.
Beat egg whites only until soft peaks form. In a separate bowl, beat egg yolks, mayonnaise and water. Gently fold yolk mixture into whites.
-In an oven-proof skillet, melt butter and pour in egg mixture.
-Cook over low heat without stirring for 10 minutes or until egg mixture has become lightly browned on bottom but still remains moist on top.
-Bake in preheated 350 degrees F. oven for 5 minutes. Sprinkle with cheese and bake 1 to 2 minutes more, or until cheese melts.
-Remove from oven. Loosen edges from side of pan and make a shallow cut through the center so that omelet will fold more easily.
-Fold omelet in half and serve.

CRAB AND ASPARAGUS OMELET WITH APRICOT
MARMALADE

4 eggs, beaten
1 1/2 cups chopped asparagus (1 inch pieces)
1 cup crab meat
1 tbsp butter
salt and pepper
olive oil
apricot marmalade (for side)

-Clean and chop asparagus into one inch pieces and place in a microwave safe container along with the butter. Cover and microwave for one minute.
Meanwhile, heat a skillet over medium heat; add olive oil.
-Spread the crab meat evenly in the skillet, stirring frequently. The asparagus should be done by this time, so add them to the skillet as well.
-Cook for several minutes, until the crab shows signs of becoming a golden brown. In a bowl, beat 4 eggs until frothy. Add to the skillet. Reduce heat to low and flip as soon as the egg solidifies.
-Transfer to a warm plate, add a pinch of salt and pepper and place a generous portion of apricot marmalade on the side.


SPANISH OMELET

3 large potatoes
1/2 onion
3 rashes of bacon
2 eggs
1/4 cup of milk

-Slice potatoes finely and put in a pan on a low heat. Chop up the onion and bacon. Add to the potatoes.
-Cook the ingredients until golden brown. Pour in, then crack the eggs on top of all of the ingredients. Let it set.
-Cut into slices and serve.

This is a chunky one. Fry onions until they are beginnning to caramelise. Then throw in some sliced tomato and heat through. Throw in some spinach, grate a bit of nutmeg over it. Then throw in six beaten eggs to which you have added salt and pepper. Cook gently finishing off under the grill. Cut into slices like a cake.

OR

Sliced chorizo, sliced tomato, spring onions (US scallions) a thinly sliced red chilli. Throw in the eggs and cook gently until set. Scatter over some chopped parsley or coriander (US cilantro)

GREEK OMELET--- it's a little different from the ordinary omelet but if you like feta cheese, you'll probably get hooked on it. Scramble the eggs, (for fluffier omelets add a pinch of baking powder). Pour egg mix in preheated pan, when that "sets up" spread diced tomatoes, diced onion, and crumbled feta cheese. It smells as good as it tastes. Hope you like it too.
