No Bake Chocolate Oatmeal Cookies
1/2 cup butter or margarine
2 cups sugar
1/2 cup milk
4 tablespoons cocoa
1/2 cup creamy peanut butter (or chunky)
3 1/2 cups dry quick-cooking oats
2 teaspoons vanilla
--Add the first four ingredients into a 4-quart sauce pan. Bring to a rolling boil and hold for 1 minute. Remove from heat. Stir in the next 3 ingredients and drop by tablespoons onto wax paper. Let cool until set.
Chocolate Cowboy Cookies
3/4 cup flour
1/4 cup cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup margarine or shortening
1/2 cup white sugar
1/2 cup brown sugar, firmly packed
1 large egg
1 cup quick-cooking oats
1/2 teaspoon vanilla
1 cup chocolate chips
1/2 cup chopped nuts (optional)
--Sift together dry ingredients; set aside. Blend together margarine (or shortening) and sugars. Add egg & beat until light & fluffy then stir in vanilla. Combine with dry ingredients & mix well. Add remaining ingredients& mix well. Drop by teaspoon onto greased or parchment-lined cookie sheets and bake in preheated 350°F oven for 12 minutes. Allow a few minutes longer if you prefer crisp cookies.
Chocolate Cake Mix Cookies
1 (18 1/4 ounce) box chocolate cake mix
1/2 cup vegetable oil
2 eggs
2 cups chocolate chips or butterscotch chips or peanut butter chips
1/2 cup chopped nuts (optional)
--Combine cake mix, oil and eggs in a bowl and mix well.
Stir in chips and nuts, if using. Drop by teaspoons on ungreased cookie sheet and bake at 350 degrees for 8-10 minutes. Upon removing from oven, let the cookies stand on sheet for two minutes, then cool on racks.
Toll House Chocolate Cookies with White Chocolate Chips
2 1/4 cups all-purpose flour
2/3 cup baking cocoa
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter or margarine, softened
3/4 cup granulated sugar
2/3 cup brown sugar, packed
1 teaspoon vanilla extract
2 large eggs
2 cups white chocolate chips
--Preheat oven to 350 degrees. Combine flour, cocoa, baking soda, and salt in a small bowl. Beat butter, granulated sugar, brown sugar, and vanilla extract in large mixing bowl with an electric mixer. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in white chocolate chips. Drop by well-rounded teaspoons (I did tablespoon measures and got 48 cookies) onto ungreased baking sheets. Bake for 9-11 minutes. Let cool on baking sheets for 2 minutes. Transfer to wire racks and let cool completely.

Oreo's cousin cookie
Ingredients:
1 box Devil's Food Cake Mix
2 Eggs
2 tablespoons Water
2 tablespoons Oil
1/2 cup Cocoa Powder
1 Envelope Unflavoured Gelatin Powder
1/4 cup Cold Water
1 cup Shortening
1 teaspoon Vanilla
1 pound Powdered Sugar, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 cup Powdered Sugar
Directions:
Combine cake mix, eggs, water, oil, and cocoa powder until well mixed. Form into balls and place on a greased cookie sheet. Flatten each ball. Bake at 400F for 8-9 minutes. Remove cookies from cookie sheet and place on paper towels. Flatten with bottom of glass. Let cool for 20-25 minutes.
Soften the gelatin powder in the cold water. Place in microwave and heat until transparent. Beat the shortening until fluffy, slowly adding the vanilla and powdered sugar.
Beat in completely cooled gelatin mixture. Shape filling into small balls. Place a ball on a cookie and place another cookie on top. Press gently to flatten.

DIRECTIONS
Thoroughly cream sugars, margarine, oil, egg, milk and vanilla.
Add dry ingredients, nuts and chocolate chips.
Drop by teaspoon onto ungreased cookie sheets. Bake at 350 degrees F (175 degrees C) for 8-12 minutes. (Cookies are light in color when done.)
