Rotisserie Chicken - about 5-6 dollars
1 Large box of Fettuccine Noodles - about 1-2 dollars
1 large container of Heavy Cream - about 2-3 dollars
1 large bag of shredded Parmesan Cheese - about 2-3 dollars
Minced garlic - small jar about 2 dollars
butter - in the refrigerator
Salt and pepper - in your kitchen cabinet

2 bags of prepared lettuce - 3 dollars each or by one get one free
Salad Dressing - in the refrigerator

One large loaf of Italian Bread - 2 dollars in the deli
butter - in the refrigerator

Chocolate Pudding/2 boxes - about 1 dollar each
Cool Whip - about 2 dollars
Cherries - about 1.50 for a small jar

De-bone the chicken and set aside. Cook your noodles and set aside. In a sauce pan add two tablespoons of butter and garlic out of the jar and saute for a minute or two. Add the heavy cream and warm. Add the Parmesan Cheese gradually and stir to melt. It will thicken as it melts. Keep warm. When ready to serve put the past on a platter and top with the chicken pieces and pour the Sauce over the pasta and chicken. Sprinkle with parsley.

Empty the bagged lettuce in a large bowl and add sliced tomatoes or cucumber if you desire.

Slice the bread and butter it then sprinkle with garlic powder and toast. Place on a plate for serving.

Early on prepare a couple of boxes of chocolate pudding and fold in cool whip. Spoon in tall wine glasses and top with remaining whipped cream and top with a cherry.

Elegant yet easy.

First you have to figure on something everyone likes? Get a pasta maker and make your own pasta for Ravolis and or spaghetti.
Make your own spaghetti sauce from tomato sauce and add a little hamburger. Either real or artificial, can't taste it anyway with the sauce. Serve with a big salad with lot's of fancy veggies. A loaf of french bread cut and toasted, sprinkle with garlic power cover in butter.
With the pasta maker not only does it taste good but they are cheap to make. Takes about a teapoon of filling for each one and it is mostly flour.
Besides, pinto beans and corn bread and a salad and fried potatoes with onions.
I guess macroni and cheese? Or make all chinese and use those raman noodles for soup, fried rice and take tiny pieces of chicken and have foiled wrapped chicken. Drenched in soy sauce. You have eggs and peppers chopped in the fried rice so it is complete and very cheap to make. serve with a bean sprout and onion, celery sliced stir fry dish.

Cheesy Chicken Pasta.
Chicken.
Poach your chicken pieces in some stock and set aside, until cool enough to handle, and de-bone.
Pasta.
Place in salted boiling water and cook until you get the degree of cooking you like.
Penne or Elbows will do very well here.
Sauce.
Make a normal white sauce and add some grated tasty cheese, remove from heat and stir until it is smooth.

Combine everything and place in an oven proof dish, sprinkle with more cheese and bake until it is bubbling and the cheese has melted and started to brown.

I can't cost it as I don't know how many it is for, but it is cheap.

Fake Lasagna

1 box of ziti with lines ($1), 1 large jar of tomato sauce ($2), 1 package of chicken (I use chicken because of the lower fat content, and also for the non pork eaters) sausage ($3), 1 onion and pepper ($1), 1 large container of ricotta cheese ($3), 1 large bag of mozz cheese ($3). Serve with a Ceasar salad. 1 bag of hearts of romaine ($2), 1 box of croutons ($2) and 1 jar of dressing ($2). The total is about $19, but you might be able to get it cheaper if you look for sales. This will serve 8 - 10 people.

Simply sautee the veggies and sausage (slice in thin half moons), until they are slightly browned. Then mix together the rest of the ingredients (only half the bag of cheese) and cooked ziti. Bake at 350 covered for about 40 minutes. Then top with the rest of the mozz cheese and bake until brown.

I have ben to lots of meetings and one of the best and cheapest dishes to serve is soup especially if its cold with lots of french bread. Lentils are $1 a kilo and then there is the vegetables. Potatoes are quite cheap I can buy 5 kilos of chats for $3.99 Leeks are more expensive three leeks for $3.99(Australian)

Hearty Lentil Soup

Lentils make an excellent base for a nourishing soup. Make a meal of this with plenty of wholemeal bread, or serve in smaller portions as a first course. Vary the vegetables according to what is available, but do include some root vegetables which give the mixture a robust quality. Vegan.

Ingredients

1 onion, chopped
2tbsp sunflower oil
2 carrots, chopped
2 medium potatoes, chopped
2 sticks celery, diced
4oz/l00g broccoli, broken into small florets
4oz/l00g red lentils
2tsp miso
1pint/600ml vegetable stock
14oz tin chopped tomatoes
1tsp thyme

salt and pepper

Method

1. Fry the onion in the oil until just soft. Next add the vegetables and mix well.
Cook over a low heat for 10 minutes.

2. Add the lentils and cook for 2-3 minutes.

3. Dissolve the miso in the vegetable stock. Pour this over the vegetables and add the tomatoes and thyme.
Bring to the boil, then simmer, covered, for 1-1? hours. Season to taste and serve piping hot.


Leek & Potato Soup
Serves 2

Ingredients

2 medium sized leeks chopped
2 medium sized potatoes diced
2tbsp/30ml light olive oil
?pint/450ml oatmilk
?tsp/2.5ml salt, pinch of white pepper
finely chopped parsley to garnish

Method

Fry the leeks and potatoes in the oil over a low heat for about 10 minutes.

Add the salt and oatmilk, Stir well, put on lid and leave for 15 minutes on the same low heat.

Check the potatoes with a fork to see if they are tender.

When ready, purée with a hand-held blender until almost smooth.

Add pepper to taste and if the soup is too thick, add a little more oatmilk and reheat before serving, garnished with the parsley.

Serve with cro?tons* or crusty bread.

THis is another cheap and easy dish to feed people you mya want to double the ingreidents
Mushroom & Cheese Macaroni
Ingredients

400g wholewheat macoroni
60g butter or margarine
2tbs chopped parsley
450g mushrooms
60g grated cheese



Method

1. Cook macaroni according to manufacturer's instructions.
Slice mushrooms and fry in the fat for 8 mins then add the parsley.
Drain macaroni and mushrooms and toss together lightly.
2. Serve sprinkled with grated cheese.

CUBAN BLACK BEANS & RICE (less than $10 for 6- 8 servings)
Make a pot of rice- 2 c. rice to approx 3 1/2 c. water (or your way of making rice).
Saute 1 lb of sausage (Chorizo or bulk breakfast sausage) with a small chopped onion, and 1 chopped clove of garlic in a large skillet. (Optional- ad 1/2 t. cumin)
Add 2 cans black beans. Fill each can half way with water and stir all of the beans out, add to pot.
Simmer about 20 minutes.
In a large deep platter, arrange the cooked rice around the edges of the platter. Pour the bean mixture in the center.
Garnish with salsa (mild, medium, or hot, depending on your tastes and those of your guests). I also put some sprigs of cilantro /parsley on the platter to make it look pretty.
This is tasty, cheap, impressive as a company dish. I always get requests for the recipe.
Serve with a salad and some corn bread muffins. I use Jiffy mix and add a can of chopped chilis.
Any leftovers (not usually), I mix together, put into individual freezer zip loc bags, flattened. Into the freezer. When I want some comfort food, I polk a couple of holes in the bag and nuke for a minute or so.
