Start with the temperature at 350 degrees. Rub butter or margarine over entire bird. Season with salt and pepper or whatever seasonings you prefer. Either put it in a covered roaster or make a tent out of foil to lock in the moisture. When the leg starts to fall away from the body take off the cover and let it brown. In all it should take at least two hours maybe two and a half depending how many time you open the oven. So put the bird in and walk away. When you start to smell it then go look. After you take it out of the oven turn it over breast side down so the juices run into the breast meat. Meanwhile prepare your side dishes and they can cook while the chicken is resting.
I assume your cooking it in an oven? I would say about 2 hours at 350 degrees F but the time your chicken needs to bake in the oven depends on the size/thickness/bone in or out of the meat. To be sure that it is cooked thoroughly, use a meat thermometer, it should be at 165° to 170°F.
Start by cooking it at 305 degrees F and start off with 1 hour 30 minutes, then if it needs longer put it for 2 hours.
