I've never used an egg-wash before and I'm debating wether or not I want to. Any experience on if you think it needs it or not?

Alton Brown's by far the best chef on Food Network these days. I've not made his pretzels but all of his other recipes I've tried have turned out to be delicious. You should use the egg wash. All pretzel recipes have some sort of wash. Some use dissolved backing soda but egg is particularly good for browning and for getting a thin but leathery skin that good soft pretzels require.
egg wash will give the crust a firmer, more golden texture...
all the soft pretzel places in the malls use melted-butter brushed on before they bake instead of eggs, it acheieves the same thing, although it adds calories, fat and flavor
Homemade pretzels are the best, and definately use the egg wash... helps achieve that nice golden color. I haven't made them since Culinary school, will have to now! Thanks for reminding me!
