Any ideas for dinner for one person? That's flavorful and with not alot to use at home?!

welll....you need to tell us wht you have in hand!

I am having a toasted tuna fish sandwich and some chicken and stars. I could not be more excited about getting to eat this, but I must wait for the tuna fish to get good and cold.

peanut butter and jelly ? or other sandwhiches like grilled cheese.

pancakes??? french toast? grill cheese?

mac and cheese. if you wanna get fancy slice a couple weiners into it. works for me.

put noodles in boiling water!! yumm. if you want put prego or ragu on top and voila you have spaghetti! mac and cheese is always good too. or get fish sticks and stick them in the oven.

Alone, I generally fix something really easy, like a can of Chili w/beans, top it with shredded cheese, onion and crushed crackers. Sometimes I add a burger patty and make a chili size. Chorizo and eggs with tortillas is good too.

most recipes are for at least 2 people. trust me, i lived that way for a long time and hated it. Just make the recipes and use the leftovers for lunches. you'll be surprised at how much you can save.

Another answer is to plan your meals so you reuse what was left in the last one to make the next one.....leftover beans make good chili, leftover chili makes good chili dogs, etc...leftover chicken makes a good quesadilla.

It's all in how you use what you have. if you plan properly you can eat very well on a budget. i do

Remember, left overs make the best lunches and save you some money, never mind the fact that YOU control what you eat

Baked Chicken and Rice

3/4 cup quick cook rice
1 (10-oz.) can cream of chicken soup
3 to 4 chicken pieces of choice
1/2 envelope of dry onion soup mix

Mix together the rice and cream soup.

Spread on the bottom of a casserole dish.

Lay the chicken pieces on top and then sprinkle them with the dry onion soup mix.

Cover and bake at 325oF. for 1 hour.

Serves 2


Beef Stir Fry for One

1 tbsp. soy sauce
2 tsp. cider or red wine vinegar
1 garlic clove, minced
1/2 tsp. sugar
1/4 lb. sirloin steak, cut into 1/4-in. strips
1/4 cup broccoli florets
1/4 cup cauliflowerets
1/2 tsp. vegetable oil
1/4 cup diced green or sweet red pepper
1/4 cup diced cabbage
1/4 cup sliced water chestnuts
2 green onion, sliced
3 tbsp. beef broth
1 tsp. cornstarch
Hot Cooked Rice

In a large resealable plastic bag or shallow glass container, combine the first 4 ingredients; add beef and turn to coat. Seal or cover and refrigerate for at least 10 minutes.

In a skillet or wok, stir-fry broccoli and cauliflower in oil until vegetables begin to soften.

Add beef and marinade; cook on medium-high for 3 minutes.

Add green pepper, cabbage and water chestnuts; stir-fry for 2-3 minutes or until the vegetables are crisp-tender.

Add onions.

Combine broth and cornstarch until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened.

Serve over rice.

Yield: 1 serving


Taco Salad

1/2 lb. ground beef
1 (8-oz.) can tomatoes
2 cups torn lettuce
1/2 cup shredded sharp Cheddar cheese
1/4 cup sliced green onions
6 pitted ripe olives, sliced
1 (3-1/8-oz.) can jalape?o bean dip
1 tsp. chili powder
1/4 tsp. salt
1/2 cup crushed corn chips

In skillet brown meat; drain off fat.

Drain tomatoes, reserving liquid. Cut up tomatoes.

In salad bowl, combine lettuce, cheese, onion, olives, tomatoes and corn chips.

To meat in skillet, stir in reserved tomato liquid, bean dip, chili powder and salt. Bring to boiling. Add to lettuce mixture. Toss well.

Serve at once.

Serves two.

the bag thing i have is "Pasta, Broccoli, Carrots, Sugar Snap Peas, & Garlic Sauce"

the green giant bag thing is on 2 bucks and some change they take like 10 mins to cook, just put them in pan and cook on med heat. DO NOT ADD WATER!

pork chops only take 20 mins to bake.

well. if you have ground beef, you can chop up some onions and garlic, tomatos, cilantro maybe if you have any and add rosmery why not, get all that and fry it till the onion gets this clear color (that means its cooked) add the ground beef and don't stop mixing it, trust me, and then just let it cook. then as almost any mexican i expect you to have tortillas so heat those up and then just make your taco. hope you enjoy! and ps trust me it don't take that long. and remember a smile can brighten anyones day.

3 eggs
1/4 cup cream cheese (like Philly)
1/4 cup chopped red peppers
1/4 cup chopped green peppers
3 slices bacon, crisply cooked, drained and crumbled
1/2 cup shredded four cheese blend, divided
1 tablespoon chopped fresh cilantro
(You want to add some other favourite ingredients? Ham? Mushrooms? Go for it!!)

Preheat oven to 400 degrees F. Beat eggs and cream cheese spread with whisk until well blended. Spray small/medium ovenproof nonstick skillet with cooking spray. Add peppers to skillet; cook and stir 2 minutes or until just tender.
Add bacon to cream cheese mixture along with most of the shredded cheese and the cilantro; stir until well blended. Add to ingredients in skillet; stir. Cover skillet with lid. Reduce heat to low; cook 6 to 8 minutes or until egg mixture is almost set in center. Remove lid. Place skillet in oven.
Bake 5 minutes or until center is set. Remove from oven. Top with remaining shredded cheese; cover with lid. Let stand 2 minutes. Loosen frittata from side of skillet then slide onto serving plate. Cut into wedges to serve.

Solo Spaghetti Dinner

I make this simple and delicious spaghetti dinner when I am home alone. It uses canned sardines and fresh tomatoes. It's great for a quiet night alone with a good book and a glass of red wine!

PREP TIME 15 Min
COOK TIME 15 Min


INGREDIENTS
2 ounces dry spaghetti or capellini
2 tablespoons olive oil
1/2 onion, chopped
1 (4 ounce) can rolled sardines with capers
1 fresh tomato, chopped
2 teaspoons crushed red pepper flakes
1/3 cup Italian bread crumbs
grated Parmesan cheese to taste, for serving


DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add the spaghetti, and cook until al dente, or 8 to 10 minutes. Drain, and rinse under cold water. Toss with a drizzle of olive oil, cover, and keep warm.
Place 2 tablespoons olive oil in a skillet over medium heat. Stir in the onion, and cook until soft and transparent, about 5 minutes. Add the sardines; cook and stir 5 to 8 minutes until the sardines start to break apart. Mix in the tomatoes, and cook until mixture is heated through. Stir in the bread crumbs. Serve over spaghetti, and top with desired amount of grated Parmesan cheese

What about a stir fry. You put in whatever meat you want, pork, chicken, beef, lamb, prawns or tofu if your a vegetarian, whatever vegies you have on hand and some sauce. Just soy is fine as a sauce but I like a bit of oyster sauce as well (not too much) you can serve it with rice or put some noodles in with the stir fry.

steamed artichoke and grilled shrimp on a bed of couscous. Easy and delicious!
