For brownies you can use cocoa too. Most stores sell it. Lots of my faorite recipes come from www.cooks.com
It is really easy to use too!

Try hersey unsweetened (bar or powder doesn't matter), it tastes very good. Both recipes are easy, but the last one is the easiet. There are a lot of choco bar that u can find also in the stores. I always use BAKERS or HERSEY. Happy cooking!
Triple chocolate brownie
Makes 20-24 squares
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
275g/10oz plain chocolate (70% cocoa solids)
275g/10oz unsalted butter
85g/3oz pecans, broken into pieces
85g/3oz milk chocolate, cut into large chunks
85g/3oz white chocolate, cut into large chunks
175g/6oz plain flour
1 tsp baking powder
4 large eggs, lightly beaten
1 tsp vanilla essence
325g/12oz caster sugar
Method
1. Preheat the oven to 170C/325F/Gas3. Line a 30x20x3.5cm/12x8x1?in tin with lightly buttered greaseproof paper or foil.
2. Put the plain chocolate and butter in a large bowl, place over a pan of simmering water and allow to melt.
3. Sieve the flour and baking powder into a bowl and set aside. Remove the melted chocolate from the heat and stir in the sugar. Add the eggs and vanilla essence. Fold in the flour, nuts and chocolate.
4. Pour the chocolate mixture into the prepared cake tin. Place in the oven and bake for 20-25 minutes. The top should be firm but the inside should feel soft when cooked. Allow to cool in the tin. Remove the brownies from the tin and cut into squares.

Moist, triple chocolatey brownies, crisp on the outside, soft & gooey in the middle.
Ingredients
225g butter
200g luxury plain chocolate
50g luxury milk chocolate
4 medium size eggs
325g golden caster sugar
2 tablespoons vanilla essence
150g plain flour
200g luxury white chocolate, chopped
1. Preheat the oven to 180°C, 350°F, gas mark 4. Line a cake tin approximately 20cm square & 6cm deep,with greaseproof paper.
2. Melt the butter, plain & milk chocolate together in a large bowl & allow to cool slightly. In a separate bowl, beat together the eggs, sugar & vanilla essence.
3. When the chocolate has cooled, whisk in the egg mixture then fold in the flour & luxury white chocolate.
4. Pour the mixture into the prepared tin & bake in the preheated oven for approximately 25 - 30 minutes until the top is is crisp & pale & the centre is almost set.
5. Allow to cool in the tin then cut into 20 squares.
