Madeleines question?!
i made some madeleines for the first time yesterday using the recipe from joyofbaking.com,
however in my opinion,
the madeleines had a strong eggy flavour and it turned out pretty hard.
im sure i followed all the instructions and the folding of egg whites properly,
but are there more tips/advice you guys can give me?
and i can't seem to make the lines of the shell shaped madeleines appear obviously.
is something wrong?

Make sure you spray the Madeleine pans well, which will help with getting the lines. I found that if my dough was a little thinner, the lines were more pronounced. I can't find my Lemon madeleines recipe right now, but they are delicious. Maybe just add a little (more) lemon juice to your recipe and that will make the batter thinner and tastier.
Hope your next ones are better. My recipe tastes eggy, but lemony. The eggy taste is normal I think. They go stale quickly, so I also freeze most and thaw them as needed.
Sounds like 2 things could have happened:
Yolks overbeaten with sugar.....OR
Mixture over-mixed after flour was added.
Sorry they didn't work out...madeleines are so yummy when they turn out!
