I don't know what either of you like or dislike, so I can't recommend something surefire, but http://www.allrecipes.com is a great resource. You can search by prep/cook time, type of dish, ingredients...whatever, and there's a lot of variety. Good luck!

Fast Fettuccini and Shrimp Recipe

1 lb. shrimp
1 package fresh fettuccini egg noodles
1/2 C. butter
1 C. heavy cream
salt
freshly ground pepper
1/2 C. fresh parmesan cheese grated

Cook fettuccini noodles in a pan of a boiling water. Cook to ala dente according to package directions. Drain and rinse well.

In a large saute pan, add 1/2 of the butter and melt it. Add the shrimp, cook for 2 minutes. Add the cream and the remaining butter. Bring to a boil and cook for 3 minutes. Add pasta and toss. Top with parmesan cheese and serve.

Serves 4.

1 pound ground chuck
1 medium onion, finely chopped
2 garlic cloves, minced
1 teaspoon kosher salt, plus extra, for seasoning
1 teaspoon freshly ground black pepper, plus extra, for seasoning
1/2 cup fresh bread crumbs
2 large egg yolks
1/2 cup water
2 tablespoons extra-virgin olive oil
1/2 pound cultivated white mushrooms, thinly sliced
1/2 cup dry sherry
2 cups chicken stock, preferably homemade
2 tablespoons unsalted butter, softened
2 tablespoons all-purpose flour
2 tablespoons chopped fresh dill
1/2 cup sour cream

Combine the chuck, half of the chopped onion, the garlic, salt, pepper, bread crumbs, egg yolks, and water in a large bowl. Mix well and form meatballs that measure about 1-inch in diameter. Heat the oil in a large nonstick skillet over medium-high heat. Add the meatballs and cook, shaking and turning, until well browned, about 5 minutes. Don't crowd the pan; work in batches, if necessary. Transfer to paper towels to drain.

Pour off any excess fat from the skillet, leaving 3 tablespoons in the pan and add the remaining onion. Cook, stirring often, until softened, about 5 minutes. Add the mushrooms and cook, stirring, until the liquid they give off has evaporated, 7 to 10 minutes. Pour in the sherry, increase the heat to high, and boil until almost all the liquid they give off has evaporated. Pour in the stock and bring to a boil.

Rub the butter with the flour in a small bowl until it forms a smooth paste. Pinch off pea-sized pieces and add little by little to the boiling sauce, whisking constantly for 3 minutes. Add the meatballs, stir in the dill, and sour cream, season with salt and pepper, and cook over low heat until the meatballs are just heated through. Serve hot.

Serve over wide egg noodles or rice.

mini penne with sausage.

one pound seasoned sausage, sweet or hot italian sausage
2 c uncooked mini penne pasta
2 small zucchini
1 1/2 c chopped or diced tomatoes
1 green pepper
1 red pepper
garlic & basil to taste
Olive oil


cook pasta. save 1/2 cup of the water from the pan.
cook sausage zucchini tomatoes( i like to toss mine in with the pasta for 20 seconds to get the skin off before chopping and cooking) peppers basil and garlic in large skillet in some olive oil. once veggies are tender and sausage is cooked add pasta and water. it will slightly thicken.. enjoy
i didnt think this would have much flavor...but it is truely amazing the flavors in the sausage bring out all the flavores in the veggies. and in my opinion its a pretty healthy meal in todays world.(you'll have left overs for tomorrow)
