Would like at least one simple recipe using canned bamboo shoots. Thank you for any replies.?!


Question: White wine:$6-10
Nothing gets more simple than boiling chicken (if using large boneless breasts, boil for about 10 min); even if you over cook the moisture stays in but the point is to partially cook chicken for further cooking later...

sautee shoots in olive oil for approx 5 mins

yellow onion, thinly sliced and sauteed in butter until light brown


use a large pan, put chicken, shoots, onion, and enough wine to "drown" the mixture
cover and let cook for 20 mins on med-high heat

(i made this up spur of the moment one night and it was delicious.)

If you want a heavier wine flavor, cook chicken (without shoots and onion) on med heat for a little less than an hr...then add the shoots and onion when plating the dish.

ou can use that stuff in any stir fry if that helps

theres a dish that i always order at the resturant its called chef salad it contains canned bamboo canned ardichok canned baby corn karnel chess cold sliced meat and cold chiken olives lettuce mmm its yummy and u can use them on stir and fry recipes

Stir-Fried Wild Bamboo Shoot with Chilli Sauce
from: choi

320 g (12 oz) wild bamboo shoot
1 green bell pepper
1 red chilli
1 tsp mashed ginger
1 tsp mashed garlic
1/2 tbsp fried white sesame
Seasonings:
1 1/2 tbsp light soy sauce
2 tsp sugar
Skin wild bamboo shoot and rinse.
Slant.
Scald in boiling water until done.
Take out and drain.
Cut green pepper and red chilli into pieces.

Heat 1 tbsp oil and saute green pepper and red chilli.
Dish up.

Saute mashed ginger and garlic with 1/2 tbsp sesame oil.
Add in seasonings and stir.
Put in bamboo shoot, green pepper and red chilli.
Stir well.
Dish up and serve.

You can use it in a stir fry, I read it in a recipe book!

In saucepan or wok heat 2 Tbsp oil, drop in 2 sliced garlic cloves and +/- same amount of sliced ginger root, Cook for some minutes until light golden. Take them out. Drop in like a 1lb of Chicken or beef or pork - cut into bite pieces. Med-high fire.
While that is cooking, have boiling salted water in small pan, drop in a hand-full of snow peas, let 3 min. take out.
Aside, in a cup mix like 1/4 cup of soy sauce with some cornstarsh (1/2 to 1 tsp), mix well.
When meat is done, take out and drop the snow peas and the bamboo, wait until hot, put meat in and then the soy mix you made, wait unitl bubbling hot. Turn off, spinkle with salt and peper.
Serve over white rice. Enjoy!

There are not many ingresients to this recipe!!!

2 tablespoons toasted rice
1/2 lime
1 teaspoon ground dried chili pepper
2 green onion, sliced
1 teaspoon fish sauce
1/2 bottle bamboo shoots
Tips and substitutions
Substitute soy sauce for fish sauce for a vegetarian bamboo shoot yum.

The bamboo shoots for this dish come is a bottle or jar that indicates bamboo shoots in/with bai yanang leaves. The shoots are partially shredded. But you will need to shred it all the way through to produce independent strands. Boil the shredded bamboo shoots in water or its juice. Remove from heat after boiled.

Add sliced green onion, fish sauce, ground dried chili pepper, lime juice and half of ground toasted rice. Mix well and place on a serving plate. Sprinkle the rest of the ground toasted rice.

Add more chili pepper, if you like it hot. If you find that you overseason the dish, add more ground toasted rice to tone down the seasonings.

Serve with sticky rice

I love those with a can of beets and boiled eggs..Make myself a salad...
Just slice the shoots, add beets and hard boile eggs with some dice green onions...Salt and pepper and PRESTO...You got yourself a great salad
