Until it goes bad.

Ground pork-3 months if properly wrapped in plasitc wrap, then with butcher paper.
Chops and steaks-6 months-If wrapped the same way.

Any longer than that, they take on a odd taste-Kinda like an old boar (I hope you have never butchered an old boar, I have and they don't taste good) and about all you can do is make chili with lots of spice to cover it.
