Chocolate chips
1 Egg
1 teaspoon Vanilla
1 teaspoon Almond extract
1 tablespoon Creme de cacao liqueur
1 cup Whipping cream
Directions:
Blend together first 4 ingredients while microwaving the cream until just beginning to boil. With blender going add the hot cream and blend until well combined. Pour into small sherbet or wine glasses (I use the disposable plastic ones) and refrigerate for several hours.

Turtle Brownies
1 box devils food or chocolate cake mix
1 cup finely chopped nuts (I use pecans)
1/2 cup butter
1/2 cup evaporated milk
35 light caramels (about 10 oz)
1/3 cup evaporated milk
6 oz pkg of chocolate chips (I used mini kisses)
Combine cake mix and nuts in large bowl. Cut in butter and stir in 1/2 cup evaporated milk. Spread half the batter in a greased 13 x 9 baking pan. Bake in preheated 350 degree oven for 15 minutes meanwhile , combine the caramels and remaining milk in small saucepan> Cook over low heat until melted. Sprinkle chocolate chips over baked layer. Drizzle caramel syrup over chocolate chips. Drop remaining chocolate batter by heaping teaspoonfuls over caramel layer. Return to oven and bake 20-25 minutes, Top layer will be soft. Cool completely before cutting. Makes 48 brownies.

Ultimate Chocolate Cake
Makes one 10 inch cake.
Ingredients:
3/4 c. butter
2 1/4 c. sugar
1 1/2 tsp vanilla
3 eggs
Few drops of red food coloring
3 squares of unsweetened baking chocolate
3 c. cake flour
1 1/2 tsp soda
3/4 tsp salt
1 1/2 c. ice water
Cream together butter and sugar and add vanilla, eggs, food coloring and melted chocolate. Mix in flour and water alternately. Bake in a greased and floured 9 x 13 pan 40 to 50 minutes.
Frosting:
1 stick butter
6 T. Crisco
1 c. sugar
3 T. flour
1 tsp vanilla
2/3 c. milk
1 tsp salt
Beat all together until fluffy. Spread over cooled cake.
Chocolate Chip Angel Food Cake with Chocolate Ganache
Makes one 10 inch cake.
CAKE :
1 1/4 cups cake flour
1 1/2 cups superfine sugar -- divided in half
14 large egg whites -- room temperature
1 1/4 teaspoons cream of tartar
1/2 cup coarsely-grated bittersweet chocolate
GANACHE:
1/2 cup low-fat buttermilk
1 1/2 cups bittersweet chocolate -- chopped
Heat oven to 350 degrees. Sift flour into a mixing bowl, then resift flour with 3/4 cup sugar.
In a clean metal bowl, beat egg whites with an electric mixer until frothy. Add cream of tartar; beat until whites have tripled in size, about 3 minutes. Slowly add remaining sugar; beat 1 to 2 minutes, or until firm and glossy.
Transfer egg whites to a large metal mixing bowl. Gently fold in flour mixture in three additions, mixing from bottom of bowl (try to use fewest strokes possible.) Fold in grated chocolate, and mix. Pour batter into a 10-inch non-stick angel food cake pan, and run a knife through center of the batter to release any air bubbles.
Bake for 40 to 45 minutes, until top becomes golden brown.
Invert the pan over the neck of a bottle and cool about 1 hour. Loosen the cake from the pan with a flexible knife, and turn the cake over onto cake stand.
Make ganache by heating buttermilk over medium heat; add chopped chocolate, and stir slowly until melted. Since buttermilk will curdle slightly, strain mixture through a very fine sieve, and stir slowly until smooth. Spread ganache over top of cooled angel food cake and allow to harden slightly before serving.
Chocolate Cherry Tarts
Yield: approximately 2 dozen tarts.
2 tablespoons butter
1/2 cup sugar
1 square baking chocolate -- melted
1 egg
1/2 teaspoon vanilla
1 1/4 cups all-purpose flour
1/8 teaspoon baking soda
1/4 teaspoon salt
8 ounces cream cheese
1/2 cup sugar
1 egg
1/2 cup maraschino cherries -- finely chopped
24 maraschino cherry halves
Cream butter and sugar; blend in melted chocolate. Add egg and vanilla; beat well.
Sift dry ingredients together and blend into chocolate mixture. Roll pastry to 1/8-inch thickness on lightly floured pastry cloth.
Cut circles with 3-inch cookie cutter and place in buttered tartlet pans or shallow muffin tins.
Blend cream cheese, sugar, and egg; fold in chopped cherries. Place 1 tablespoon filling in each tart. Bake at 350 degrees for 10 to 12 minutes. Remove from oven, top with cherry half. Chill.

2 boxes of fudge brownie mix. make batter and add 1/4-1/2 cup of brandy, and 1 bag of toffee bits. mix into batter, bake . the best brownies ever!!!!! ice them if you want and serve with a vanilla bean ice cream. yummmmm
Oreo Truffles
1 lb Oreo cookies (3 sleeves)
8 ounces cream cheese, room temperature
1/2 teaspoon vanilla extract (using different extracts allows for subtle flavour changes...I've used mint extract, upped to 1 tsp)
1 lb milk chocolate
1/2 lb white chocolate
Using a food processor, grind cookies to a fine powder.
With a mixer, blend cookie powder, cream cheese and vanilla extract until thoroughly mixed (there should be no white traces of cream cheese).
Roll into small balls and place on wax-lined cookie sheet.
Refrigerate for 45 minutes.
Line two cookie sheets with wax paper.
In double-boiler, melt milk chocolate.
Dip balls and coat thoroughly.
With slotted spoon, lift balls out of chocolate and let excess chocolate drip off.
Place on wax-paper-lined cookie sheet.
In separate double boiler, melt white chocolate.
Using a fork, drizzle white chocolate over balls.
Let cool.
Store in airtight container, in refrigerator.
Chocolate! Chocolate! Chocolate! Bundt Cake With Chocolate Glaze
Cake
1 (18 1/4 ounce) package devil's food cake mix
1 (4 ounce) package instant chocolate pudding mix
2 cups semi-sweet chocolate chips
1 3/4 cups water
2 eggs, beaten
1 teaspoon vanilla extract
Chocolate Glaze
3 tablespoons cocoa
2 tablespoons butter, melted
1 cup powdered sugar (10X)
2-3 tablespoons hot water
Cake: Preheat oven to 350°.
Grease and flour bundt pan, set aside.
In large mixing bowl, combine cake mix, pudding mix and chocolate chips.
In another bowl, combine water, eggs, and vanilla mixing well.
Add egg mixture to dry mixture and mix with spoon until just blended.
Pour into prepared pan.
Bake for 50 to 55 minutes or until cake tests done when wooden pick in center comes out clean.
Cool 15 to 20 minutes before removing cake from pan.
When completely cool, drizzle cake with Chocolate Glaze.
Chocolate Glaze: Combine all ingredients in bowl.
Mix with spoon until smooth.
Perfect Chocolate Brownies
3/4 cup cocoa powder
3/4 cup shortening
2 1/4 cups sugar
4 large eggs
1 teaspoon vanilla
1 1/4 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 cup chopped walnuts or pecans
Preheat oven to 350 degrees.
Grease a 9x13" pan.
Melt shortening in a large saucepan over low heat, then stir in cocoa.
Remove from heat.
Mix in sugar and vanilla then mix in eggs one at a time.
Stir in remaining ingredients then stir in nuts.
Bake for 30 minutes.
Cool completely, before cutting into 2x2" squares.
I have read all the great reviews and learned from them, thank you all. Now I line my pan with buttered alumunin foil or parchment paper. This works very well.
Death By Chocolate
INGREDIENTS
1 (19.8 ounce) package brownie mix
2 (3.9 ounce) packages instant chocolate pudding mix
1 (16 ounce) package frozen whipped topping, thawed
3 (1.4 ounce) bars chocolate covered English toffee
DIRECTIONS
Prepare brownies according to package directions. Let cool.
Mix pudding according to package directions.
In a glass punch bowl, layer in the following order: 1/2 of the brownie, crumbled; 1/2 of the pudding; 1 toffee bar, crushed; 1/2 of the whipped topping.
Repeat layers in the same order. Save the last toffee bar to crumble and sprinkle on top before serving.
Refrigerate. Best if made the day before you serve it.
