Cooking brown rice?!


Question: i made my brown rice for the first time last night. i only made about 1 cup of it, i added about nearly 2 cups water and let it simmer with the top on for 45 mins. it came out a bit soggy on the outside but still a bit firm in the center. what is up?

Try a little more water and a little more time. Most cooking instructions say to use 2-1/4 to 2-1/2 cups water for 1 cup brown rice (I use the lower amount), and simmer for 45-50 minutes, adding a few more minutes if it's not done yet.

I put at least 2.5 cups of water to a cup of brown rice, otherwise it comes out "chewy", and I cook it with a lid on at a simmer for about an hour, and I also let it "steam" for a few min.'s after I take it off the heat without opening the lid.

You did quite right, although I tend to give it more time.
One suggestion to prevent the sogginess is to wash the rice in cold water while you're waiting for the water to boil. This both cleans the rice and prevents it from getting soggy/stick together.
Add the rice to the water and bring it back to boil. Put a lid on it, and the heat to low.

Hi,
Brown rice needs more water and time. Add upto 21/4 water and cook it to boiling with lid and then simmer for 45min, covered. After that let it stay for another 10min or so without heat, open the lid only after that. It will cook well.

GENERAL DIRECTIONS FOR PREPARING BROWN RICE

Ingredients

1 cup uncooked brown rice
2-1/4 cups liquid (water, broth, juice)
1 tablespoon butter or margarine (OPTIONAL)
1 teaspoon salt (OPTIONAL)
NOTE: 1 CUP UNCOOKED BROWN RICE YIELDS ABOUT 3 TO 4 CUPS COOKED RICE

Directions: Top of Range, Microwave Oven, Rice Cooker

Top of Range

Combine 1 cup rice, 2-1/4 cups liquid, 1 teaspoon salt (optional), and 1 tablespoon butter or margarine (optional) in 2- to 3-quart saucepan.


Heat to boiling; stir once or twice.


Reduce heat; cover and simmer. Cook for 45 to 50 minutes. If rice is not quite tender or liquid is not absorbed, replace lid and cook 2 to 4 minutes longer. Fluff with fork.
Microwave Oven

Combine 1 cup rice, 2-1/4 cups liquid, 1 teaspoon salt (optional), and 1 tablespoon butter or margarine (optional) in 2- to 3-quart deep microwave baking dish.


Cover and cook on HIGH 5 minutes or until boiling.


Reduce setting to MEDIUM (50% power) and cook 30 minutes. Fluff with fork.
