Meals??????!
Answers: I have to cook a meal for my family and I was wondering if anyone had any original idea's /recipes? nothing too complicated. thanks in advance
SPINACH MILANESE WITH FRIED EGGS
2 1/2 lbs fresh spinach
3/4 cup grated Parmesan cheese
6 eggs
1/2 cup butter, melted
salt and pepper, to taste.
Preheat oven to 375°F.
Bring 1/4 cup of water to a rapid boil in a large skillet.
Wash spinach well in cold running water. Remove any heavy stalks.
When water is boiling, add spinach and cook for 7 minutes. Drain well. Wring dry in paper towels or squeeze dry with cheesecloth. Set aside.
Dry the skillet which was used to cook spinach. In the same skillet, melt 4 tablespoons of butter. Sauté spinach in butter for several minutes over medium high heat (do not let butter begin to brown!).
Grease an ovenproof casserole or baking dish with 1 tablespoon butter. Transfer spinach to baking dish. Sprinkle evenly with Parmesan cheese. Melt remaining butter and pour over spinach. Bake in oven at 375F. When cheese has thoroughly melted, remove from oven.
Meanwhile, sauté the eggs. Serve with the spinach on a heated serving dish.
Serves 3, 2 eggs for each serving.
Pasta with a simple tomato sauce (use store canned if you cant make homemade.. ragu etc)
garlic toast (baquette rolls sliced and spread with a mix of melted or softened butter crushed garlic and parmeson cheese)
green salad with italien dressing on side
Roasted vegetable pasta!!
Cut up veggies (all are best but all are optional) zucchini, onion, mushrooms, eggplant, peppers (red are best for taste and look).
Throw them in a bowl and pour in a bit of Italian dressing to marinade for a while.
Put them all in a lasagna type pan.
Now put in LOTS of garlic cloves and some Italian plum tomatoes, some Italian herbs (I used a blend) and a bit of olive oil.
You can add meat too if you like. I often use shrimp but don't cook for the whole time. Toss them in close to the end. They don't take long to cook.
Roast in oven, stirring occasionally.
Near the end, get pasta cooked (I like penne with this)
Now toss all those veggies into the hot cooked and drained pasta.
Add lots of parmigiana or romano cheese.
Serve with some garlic bread and your favourite salad.
I get raving reviews for this every time!

Tortellini soup is wonderful and goes great with garlic bread and green salad! I go to allrecipes.com and browse their recipe selection! I love doing this recipe in a large slow cooker and I'll double the recipe so I can feed a large group and have some left over!
