How can I make flying fish Caribbean style?!


Question: Flying Fish ~ Barbados Style

Serves: 4-6 persons

INGREDIENTS:

8 flying fish fillets
1 small onion
1 small green pepper choppped
1 blade chives chopped
thyme and parsley
salt and pepper
few drops of lime juice
1 egg beaten
breadcrumbs
oil for frying
2 limes wedged

METHOD / DIRECTIONS:

Mix the seasoning ingredients and spread over the meaty side of the fish. Leave for about 1 hour. Dip the fish into the beaten egg and then into the breadcrumbs. Fry gently in a little oil for about 10 minutes.

Fried Flying Fish (This fish dish is a specialty of Tobago)
Yield: 4 servings

Ingredients:

2 eggs
1? cups flour
? cup minced onion or chives
2 tablespoons minced parsley
2 teaspoons minced fresh thyme (or 1 teaspoon dried thyme)
1 teaspoon minced celery leaves
1 teaspoon Worcestershire sauce
freshly ground black pepper
salt to taste
2 pounds flying fish fillets (or substitute other white fish)
vegetable oil for frying
Method:
Combine all the ingredients except the fish and oil to make a batter, and mix well. Add the fish and let sit for 30 minutes.
Remove the fish and fry in oil until deep brown. Serve with tartar sauce and a choice of hot sauces.

FLYING FISH (Fried)

INGREDIENTS
1 packet filleted flying fish
3 cloves garlic minced
1 tsp. onion powder
chive and thyme minced
1 egg beaten
lime juice
1 tsp. parsley, minced
salt to taste
hot pepper to taste
seasoned flour
fine dry bread crumbs
oil for frying

METHOD
1.Soak fish in water and lime juice.
2. Rinse and drain well.
3. Season fish with garlic, onion, chive, thyme, parsley salt and pepper; Put seasoning between seams.
4. Mix beaten egg with a little water.
5. Coat fish in seasoned flour, then dip in egg and finally coat with dry crumbs.
6. Fry in hot oil, 5 minutes on each side, turning once until browned.
7. Drain on kitchen paper. Serve with hops.

Season the fish with a little fish seasoning, all purpose seasoning and black pepper. Fry the fish. In the meantime slice an onion and some scotch bonnet peppers. Gently heat some malt vinegar, add the onions and the peppers. cover and simmer until onions are soft. pour over the fish. Leave to stand for half an hour, then its ready to eat.
