Question: Italian Style Meat & Mushroom Sauce

2 pounds ground beef, browned (or 1 beef, 1 pork sausage)
1 1/2 T. Italian seasoning
4 to 6 garlic cloves, minced
2 onions, chopped
2 sm. cans sliced mushrooms
1/2 cup chopped parsley
3 cans (8 oz. ea.) tomato sauce
1 cup dry red wine
2 to 3 t. salt

Combine all ingredients in crock pot; stir well. Cover and cook on high for 1 hour, then on low 8 to 12 hours.

2 lb Round steak -- lean
2 Green peppers -- sliced thin
2 tb Dried onions -- minced
1 c Beef broth
2 tb Low sodium soy sauce
1/2 ts Ground ginger
1 Garlic clove -- minced
1 ts Worcestershire sauce
Use dried onions or finely chop about 1/2 of a fresh onion.

Cut the steak into serving size pieces. If desired you can brown the meat in a little hot oil before adding to slow cooker. Place the thinly sliced pepper rings in bottom of slow cooker, reserving a few to place on top of meat if desired. (Vegetables cook better when placed on bottom of pot. ) Arrange the meat on pepper, careful to not stack one piece directly on top of another. Mix all other ingredients and pour over meat and peppers. Cover and cook on low for 8-10 hours or on high for about 4 hours. Serve with mashed potatoes and simply seasoned vegetables.

Barbecue Beef For Sandwiches

2 1/2 to 3 lbs lean chuck roast or bottom round
1 1/2 cups ketchup
1/4 cup packed brown sugar
1/4 cup wine vinegar
2 tablespoons spicy mustard or Dijon
1 tablespoon Worcestershire sauce
1 teaspoon liquid smoke flavoring
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder

PREPARATION:

Place beef roast in crockpot. Combine remaining ingredients; pour over roast. Cover and cook on LOW for 8 to 10 hours. Remove roast, shred meat. Place shredded meat back in crockpot; stir to coat well.

You can roast any piece of meat.
Add veggies, potatoes, garlic and some water and let it all slowly cook for hours. Even a cheaper piece of roast meat will be deliciously tender. Easy peasy.

I've got one going right now. I have a few pounds of boneless country style pork ribs in there. I cut up 2 large onions into good size pieces and added them, as well as a handful of garlic cloves roughly chopped. Add in a bottle and a half of your favorite barbecue sauce, add about a cup or so of water (you want the meat and vegetables to be covered). I've also thrown in a few tablespoons of brown sugar, salt and pepper and let it go all day. I put the pot at high for the first two hours to get things going and then down to low until dinner time. About an hour before I'm ready to serve, I'm going to take out about 1/2 cup of the sauce and let it cool. Then thicken with corn starch. I will remove the vegetables and meat, add the slurry to thicken the remaining sauce and pour over.

I serve this with either rice, egg noodles, or baked potatoes. My family likes a little bread to dip in the sauce too.

Swedish Meatballs recipe

1 1/2 cups fresh bread crumbs
1 cup milk or cream
1 1/2 pounds ground chuck
1/2 pound lean ground pork
2 eggs
1 medium onion, finely chopped
1 3/4 teaspoons salt
1/4 teaspoon allspice
1/8 teaspoon nutmeg
1/8 teaspoon cardamom (optional)
1 (10 1/2 ounce) can beef consommé
or 1 1/4 cups beef broth
1/8 teaspoon pepper
2 tablespoons butter, melted
2 tablespoons flour

Soak bread crumbs in milk or cream 5 minutes in large mixing bowl. Add ground meats, eggs, onion, 1 1/2 teaspoons salt, allspice, nutmeg and cardamom. Mix well and refrigerate covered for 1 hour.

Shape mixture into 1-inch diameter balls. Place on rack of broiler pan and bake in 400 degrees F oven for 15 minutes. Put browned meatballs in crock pot. Add 1/2 can of beef consommé, pepper and remaining 1/4 teaspoon salt. Cover and cook on LOW for 4 to 6 hours. (HIGH for 2 to 3 hours)

To thicken gravy, turn crock pot to HIGH. Combine butter and flour to make a smooth paste. Add paste to remaining 1/2 can of consommé. Pour into meatball mixture. Cook until thickened.

SIMPLE

1- roast beef - outside round
1 cup balsamic vinegar
2 cloves garlic (chopped)
dried oregano, parsley, salt , pepper

Place the chopped garlic on bottom of crock pot

On stove in fry pan, add a little oil, brown each side of the roast beef,

on a large plate -add some dried oregano, parsley, salt , pepper,

once beef is browned, put on plate and roll meat into seasonings to cover roast beef.

Place roast ontop of chopped garlic
pour 1 cup balsamic vinegar over meat,
Cook on low 7-8hrs.
Remove, put on plate , cover with tinfoil for 5-10min

make roasted potatoes , carrots and gravy(add a 2 tbsp.of balsamic to gravy to add lovely flavour)
