Check for buffalo mozzarella to go with those tomatoes. And pick up wedges of Parmesan Reggiano, Romano, and asiago. Shred those three all together and you'll have the best homemade Italian blend.

The deli in your local grocery should carry "real" cheeses in blocks or wedges. Romano or parm would be good with your salad. Have you ever tried gorgonzola? It is EXCELLENT!
Good luck!

feta cheese
its kind of like a parmesan cheese but more flavorful
also good on hot pasta

pecirino,asigo,parmasean,provolone,mozze... all very good chesses for anything italian.

oooooooooooh, some fresh REAL mozzarela would be great in there, or a nice feta, or some freshly grated parmesean, or even a some provolone (smoked provolone is my favorite!)

One of my favorite ways to eat fresh mozarella is to slice it farily thin, take some sun dried tomatoes with some garlic, and put those over the mozzarela with (a just a bit of the oil from the tomatoes) and serve. It's simple, it's elegant, and soooooooooooo good!

Try to find a good buffalo mozzarella--top your salad with this and put a sprinkle of sea salt on the cheese.
