Any great recipes for using egg roll wraps?!
Answers: I am looking for unique and great tasting recipes to use my egg roll wraps that are not the standard Chinese egg roll. I found one recipe that is a Southern egg roll filled with bbq pork and coleslaw- sounds yummy! But would love to try others. I love chicken, pork, mexican food, American cuisine, deep fryed foods, etc... to give you the type of recipes I am looking for. More main meals and side dishes, no sweets. Any delicious recipes would greatly be appreciated.

Cut the egg roll wrappers into quarters as they need to be the size of a wonton wrappers (same thing just different sizes)
I just eyeball the recipe and adjust it to how many people i'm feeding. If it's just me a make a small bowl, make enough for myself and then refrigerate the rest of the filling for later.
I chop about 1/2 bag of frozen shrimp into small peices. I add about 1/2 block of cream cheese and about a small handful of finally chopped onions or green onions. Finish with a pinch of salt and pepper, mix it really well and then fill the wontons. I put a small bit in the center, using my finger I wet the edges then fold 1 corner onto another. I press firmly around the edges to seal it then fold the sides in so they cross in the center. Next fry them in hot oil until they are golden brown. I serve them with a sauce of soy, honey, garlic, fresh ginger (if I have it), and a drop or two of toasted sesame seed oil. Sauce can be adjusted to your own taste. I like mine sweet so I add a bit more honey.
These are very similar to crab rangoon.

These wrapper also make great ravioli! Stuff them with whatever you like from sausage to a portabella and ricotta filling.

what you should do is take the egg roll wrap fill them with cheese or chocolate deep fry them and serve the cheese one with salad and the chocolate one with vanilla ice cream.

Also you can make teque?os with a cheese filling and deep fried you can eat this with pico de gallo or guacamole(avocado) sauce.Also you can filled it with sweet milk (manjarblanco) deep fried as a dessert...cover it with powder sugar...
Allrecipes.com has great recipes. Do an advanced search with wonton or egg roll wrappers and you should be able to find something. The one below you could stuff with anything. You might have to cut the egg roll wrappers to work but they would still be good.
WonTon Ravioli

For the filling:
2 tablespoons finely chopped onion
1 tablespoon unsalted butter
1/2 cup fresh or thawed frozen corn kernels
1 poblano chilies, roasted and minced or 1/4 cup minced pickled jalapeno
1/2 large red bell pepper, roasted and chopped fine
1/4 teaspoon ground cumin
1/2 cup grated Monterey Jack
For the sauce:
1 garlic clove, minced
1/4 stick (2 tablespoons) unsalted butter
1 28-ounce can plum tomato, drained and chopped coarse
1 tablespoon fresh lime juice, or to taste
2 tablespoons finely chopped fresh coriander
24 won ton wrapped (available at Asian markets and many supermarkets), thawed if frozen
Garnish: 4 fresh coriander sprigs
Make the filling: In a heavy skillet cook the onion in the butter over moderately low heat, stirring, until it is softened, add the corn, and cook the mixture, stirring, for 2 minutes, or until the corn is tender. Stir in the chilies, the bell pepper, and the cumin and cook the mixture, stirring, for 2 minutes. Transfer the mixture to a bowl and let it cool completely. Stir in the Monterey Jack and salt to taste and chill the filling, covered, for 1 hour, or until it is cold.
To make Won Ton Ravioli: Put 1 won ton wrapper on a lightly floured surface, mound 1 tablespoon of the filling in the center of the wrapper, and brush the edges with water. Put a second wrapper over the first, pressing down around the filling to force out the air, seal the edges well, and trim the excess dough around the filling with a decorative cutter or sharp knife. Make won ton ravioli with the remaining wrappers and filling in the same manner, transferring them as they are formed to a dry kitchen towel, and turn them occasionally to let them dry slightly.
Bring a kettle of boiling salted water to a gentle boil and in it cook the ravioli in batches for 2 minutes, or until they rise to the surface and are tender. (Do not let the water boil vigorously once the ravioli have been added). Transfer the ravioli as they are cooked with a slotted spoon to a dry kitchen towel or paper towels to drain and keep them warm. To make the sauce: In a heavy skillet cook the garlic in the butter over moderately low heat, stirring, for 1 minute, add the tomatoes, and boil the mixture, stirring, for 10 minutes, or until it is thick. Stir in the lime juice, the coriander, and salt and pepper to taste and keep the sauce warm, covered, while preparing the ravioli.

60 Eggroll Wrappers
1 lb. mild or hot Italian tube Sausage,casing removed
you could also use cooked & drained ground beef in place of sausage
1 pkg. sliced Pepperoni, cut the slices -(in half)
1 Red Bell Pepper,finely chopped
1 Green Bell Pepper,finely chopped
1 large Onion, finely chopped
1 small can of Mushrooms,drained & finely chopped
2 - (14 oz.)jars of Pizza Sauce
3 - (8 oz. each) pkgs.of shredded "Pizza Cheese"
1.Cook the Italian sausage & slice thin,diagonally.
2.Mix all ingredients in a large mixing bowl,(Except) for the eggroll wrappers.
3.After all the ingredients have been mixed well,place about 1/4 cup of the mixture on a eggroll wrapper & roll up eggroll style or like a burrito.
4.Deep fry for about 5 - 6 mins. at 375* - 400*
You can Freeze these, But....Freeze "Uncooked"
5.To Freeze: Place "Uncooked" Pizza Rolls in single layers on cookie sheets "Don't Stack"
place cookie sheets into freezer & after Pizza Rolls are frozen completely, place into Gallon "Zip Loc bags. This process keeps them from sticking together & allow you to remove only what you might need.
Thaw about 10 mins before deep frying
