Superbowl party is at my house this year. What should I make?!
Answers: It could be snacks, appetizers, dips, meals...it just needs to be something very easy, or something I can make on Saturday. Recipes please!!!
I threw a big superbowl party two years ago, anything finger-foodish is perfect. Here's what we served:
Hot Wings (threw a frozen 5lb bag in the slow cooker and poured Hooters Wing sauce in, then cooked them all day on low - they were great and took no effort at all).
Nachos with salsa and queso (just the classic rotel and velveeta, but it' so delicious!)
Veggie Tray
Potato skins - another easy one - just lined my pans with foil, then layed down the skins, drizzled with olive oil, salt, seasoning, shredded cheese and bacon bits then baked and served with sour cream.
Mini Meatball subs - again, super easy - pick up a few baguettes and cut them into mini sub size. You can either buy frozen meatballs or make your own, then put in a large saucepan and simmer in a jar of pasta sauce. Provide shredded cheese to garnish.
Deviled Eggs - I'm not a fan of these, but we had a few requests, so that's how they ended up on the menu...I made them the night before and they vanished in about a half hour after serving.
Whoopie Pies - not too many people have had these, but they are a childhood favorite of mine and really easy to make. Just mix up chocolate cake mix per package instructions, but use half of the amount of water called for. Scoop out batter using a cookie scoop and bake on a sheet pan at 400*. They will puff up to look like cookie cakes. Spread with vanilla frosting and press two together like a sandwich. They are just like the Oreo Cakersters. They were the biggest hit at our party. I made a huge tray (ironically, they took more work than anything else I made, but I did them the day before) and really wished I had doubled them.
We just layed everything out on a big table with paper plates and napkins. Our guests brought their own booze and that was placed in a cooler at the end of the table. I was able to do all of the cooking myself, since everything on the menu was "hands off". I just set it up in the morning, and let it all simmer all day.
Hopefully that gives a few ideas!
lil smokies. mmmm http://southernfood.about.com/od/crockpo...
Pinwheels:
4 flour tortillas
1/4 cup of Ken's Cesar Steakhouse Dressing
1/2 cup of shredded Cheese
1/4 lb of Shredded Lunch meat (turkey, ham etc)
Cut tortillas in strips add all ingredients together and roll them up and put a toothpick in it to keep them together. So easy and yummy!
hot wings in the oven are easy & always a hit.
Just put your wings in a baking pan & cover with BBQ & bake for 30-45 mins at 350.
You can buy the heat-n-serve kind in the frozen food section of the Grocery.
When I have a party for a lot of people I like to keep things simple. For a big party like that finger foods and one pot meals go over really well. They are easy on you and people can pick at them all day. I always have a fruit and vegetable tray with some dips. I like to cut up the vegetables the day before and keep them in a little water in the refrigerate so I have less to do the day of. A simple fruit dip that tastes like caramel is one 8 ounce package of cream cheese, tablespoon of vanilla and a cup and a half of brown sugar. Beat the ingredients until smooth. You may need to add a little more brown sugar depending on your tastes. This dip goes well with any fruit especially apples and strawberries. This can be made up to a week in advance. A great one pot meal is chili or beef soup. www.foodnetwork.com has a lot of great recipes for those dishes. Everyone likes hot wings or BBQ wings. I like Frank's red hot wing sauce and Kraft honey BBQ sauce. The bottle has directions on the back on how to make the wings.
Mexican food/ burritos (make yourself) taquitos (frozen) just need to warm up, tacos(make yourself) and served with corona,or millers Chill.
ingredients same for tacos and burritos except refried beans, ground beef in a pot, lettuce, onions, tomatoes, cheese and salsa!

This is a big hit at parties -
EASY CRAB DIP

2 8oz packages cream cheese
1/2 package imitation crab
Beat together salsa and cream cheese until smooth. Then chop up crab and stir into mixture.

You could also make chicken tenders, and chili. Any crock pot meal would be good. Puppy Chow, brownies. Have fun :)
Make a pot of chili on Saturday then reheat at serving time. It gets better after sitting for a day!
Brown off two pounds of ground meat (can be beef, turkey, pork, lamb or a mixture. I've even used venison) in a skillet with a little salt and pepper on it. After it is browned, add a large can of tomato paste, 1 TBSP garlic powder and 2 TBSP cumin. Stir and turn down very low. Add a cup of water and let it simmer for about 20 minutes.
In a large pot, start a saute with onions and peppers, you can add carrots too if you want and zucchini optional. Add a large can diced tomatoes and a can of tomato puree then a can each of water. Bring to a boil and turn down. Add a jar of chili sauce ,1 cup of chili powder and 2 TBSP Cayenne pepper (or more if you like it really spicey). Add 2 large cans of red and/or pink kidney beans, or pinto beans. Let all cook together for 30 minutes then add the meat mixture and turn off heat. After cool, refrigerate over night. On the day, heat the chili on low covered until ready to serve. It takes about an hour on very low to reheat slowly and fill the house with that great aroma. Serve with oyster crackers, guacamole, sour cream, shredded cheese, chopped olives and additional hot sauce.
Before the game and during the first half, serve a vegetable tray with dip and some assorted chips, beer and wine. Serve the chili during half time and the third quarter, then put out coffee and a 1/4 sheet superbowl cake decorated appropriately.
This is what we are doing for 14 people. The kids will have hoagies when we have the chili. They share everything else we put out. I make a punch for them with cranberry juice concentrate and sprite zero with ice cubes. It's a lot of fun and not much work. Just put napkins everywhere and have a large garbage can available to throw away trash. We bought themed paper products at a party store and we have plastic silverware, so it will be easy clean up too. Have fun! Rob R
Chili . . . with fritos and cheese to garnish.
Club sandwiches NZ style. We would use four slices of bread and three fillings. eg cold ham, mashed egg and lettuce.
Put an unsliced loaf of white or brown bread (preferably both) bread into the freezer for one hour. This will make slicing easier. Remove crust from bread and slice very thinly. Fill with any of the following: egg salad, seafood salad, cream cheese and cucumber, cream cheese and watercress, turkey or chicken salad.
Cut into fingers.
I always make chili for football games. Make it in the crock pot early in the day and then set on "keep warm" setting if you have it. Have a tray with raw veggies and ranch dip. Then I also like to have other munchies on hand like chips & dip. The Ro-Tel/Velveeta dips are always a hit. Add some browned ground beef also. And for somethin sweet, have some puppy chow sitting around in bowls.
Chunky Chili
1 pound lean ground beef
1 bay leaf
1 small onion, chopped
1 t. Worcestershire sauce
1 t. salt
2 cans (8 oz. ea.) tomato sauce
2 t. chili powder 2 cans (15 oz. ea.) kidney beans
Brown the ground beef in a skillet. Drain the kidney beans. In the crock pot, combine the beef with remaining ingredients. Cover and cook on high for 2 to 3 hours. Be sure to remove bay leaf before serving. This is a very thick chili. Add 1 cup of water to make a thinner chili. Serve with cheese, fritos, or rice.
Puppy Chow
9 cups Chex? cereal (any variety)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar
Preparation Directions:
1. Into large bowl, measure cereal; set aside.
2. In 1-quart microwavable bowl, stir together chocolate chips, peanut butter and butter. Microwave uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.
