Fresh Veggie Pizza

2 packages crescent rolls
1/2 green pepper
1/2 red pepper
1/2 yellow pepper
1-1 1/2 cups broccoli florets
1cup cauliflower florets
2 thinly sliced green onions (optional)
1 c. shredded mozzarella
11 oz. cream cheese ;1 8oz pkg and 1 3oz or 2 8oz you do the math :)
2 Tbls dill
2 Tbls milk

Roll crescent rolls onto lighly greased cookie sheet. Be sure to press the pieces of dough together. I find it easier to leave them side by side and then flatten them out on the cookie sheet as needed. Bake according to package directions. Completely cool before putting on cream cheese mixture. In medium sized bowl mix softened cream cheese, dill and milk. Spread on pizza crust once it's completely cooled. Chop veggies and sprinkle over pizza, top with green onions and cheese. Lightly press down on toppings. Cover with plastic wrap and refrigerate at least 2 hours before serving.

*** You can add/omit whatever veggies you like.

Ground Beef Dip

2Lbs. lean ground beef
1c. chopped onion
1 jalapeno seeded and chopped (optional but it doesn't make it too spicy if you remove the seeds)
2 cloves garlic, minced
2 cans (8-oz ea) tomato sauce
1/2c ketchup
1tsp oregano
16 ounces cream cheese
1/2c grated parmesan
1 1/2tsp chili poweder

Brown beef, onion and jalapeno until beef is cooked through. Drain fat and put into crockpot. Add the rest of the ingredients. Cook on low for 2 hours or until cream cheese is thoroughly blended. Stir, taste, and adjust seasoning if desired. Serve with tortilla chips!

Take care!

I love jalapeno poppers Mine are bacon wrapped and cream cheese stuffedThe cook determines the spice by how many seeds are left in the jalape?o "boats". The cream cheese cools off the spice a bit, so I encourage you to experiment with varying quantities of seeds.

Servings: poppers 12 Make 3 batches at least they run out quick!

6 medium fresh jalape?o peppers similar in size
8 ounces (or less) cream cheese block softened
12 strips or one pound raw bacon
Preheat oven to 250 degrees Fahrenheit.

Line a rimmed cookie sheet with foil and place a cooling rack on top.

Cut stems off jalape?os, careful to keep peppers intact (do not cut into the pepper yet, just remove the outside stem).
Wear gloves to hold jalape?os while cutting in half lengthwise. Remove veins and most of the seeds. While removing the veins and seeds, keep in mind each side of jalape?o will act as a "boat" holding the cream cheese, so be careful not to cut through peppers or the cream cheese will leak out. Leave a few seeds inside the "boats" for spice as desired.
Using a knife, fill each half of the jalape?os with cream cheese. Wrap each half with one slice bacon. Place bundles on rack on top of cookie sheet. Bake for 45-60 minutes. Most ovens cook hotter towards the back, so you might want to rotate cookie sheet half way through to ensure even browning of bacon. Bake until bacon is cooked to desired crispness. Use tongs to transfer to paper towels and allow to drain and cool for 10 minutes. Serve.

This is a hot appetizer dip, and it is very easy to make. The first time I had it, a long time ago (way back in the 80's) I asked for the recipe, a keeper, here it is -

Green Olive Paste on Crostinis
http://www.foodnetwork.com/food/recipes/...

This one has a lot of ingredients, but most of it gets pureed together in the food processor to make the paste. Basically, make the french bread rounds and toast them in the oven (the crostinis). Then grind the almonds and add everything else except the last 3 ingredients and puree it together. Then, use the cheese, pimiento and paprika as garnish after putting the paste on the crostinis. Make the paste a day or so ahead and do the crostinis the day of the party, or serve it on melba toast or pita chips and save that work.

Cherry Tomatoes Stuffed with Spanish Olive Tapenade
http://www.foodnetwork.com/food/recipes/...
Don't let the name intimidate you. You can buy Olive Tapenade if you don't want to make your own, but you basically just throw some olives, capers, lemon zest and olive oil into a food processor and mince it all up. Then stuff hallowed out cherry tomatoes. You can have a kid help you by stuffing the tomatoes. Or, you can also make this and serve it over pita chips, that little bread that comes in a loaf and is sold in the appy department, melba thins, crusty bread ... anything really. I would make the tapenade the day or 2 days before and stuff the tomatoes the morning of the party.

Shrimp Ceviche
http://mexicanfood.about.com/od/fiestaap...
This is a marinated shrimp salad kind of dish that you can serve with tortilla chips or I like it on pita chips or crusty french bread (like a bruchetta). You basically marinate the shrimp in the juice which cures it (like smoking does to pork). Then you mix the rest of the ingredients with the shrimp and chill. This lasts up to a week so you can make this ahead of time.
