What is a yummy, cheap quick and easy family dinner reciepe?!


Question: "Mexican Casserole"

1 pkg. Taco Seasoning mix
11/2 lbs. Ground Beef, browned & drained
1(15 oz.)can Chili beans
1-(28 oz.)can diced Tomatoes,drained well
1/2 c. shredded Cheddar Cheese
2 - boxes Jiffy cornbread mix

1.Preheat oven to 375* & Spray a 9"x13" baking dish with non-stick cooking spray

2. Brown ground beef in large skillet & drain fat

3. Drain tomatoes and place into a large mixing bowl. Add beans(liquid too),cooked ground beef,& Mix taco seasoning mix with 3 TBsp water, then pour into mixture and stir well.

4.Pour into baking dish. Mix cornbread mix according to directions on box.Then pour cornbread mixture over top of everything & sprinkle with 1/2 cup cheese.

5.Bake uncovered for about 40-45 mins. or until (cornbread is done). Check middle with toothpick, if it comes out clean it's done.

Baked Peachy Chicken
Place chicken pieces ( thighs and drumsticks are the most economical, but you can use whatever is on sale) in a baking pan, skin side up, and sprinkle with salt and pepper. Pour a large can of peaches over the top and bake for 45 minutes at 350. Serve over rice, withsomething green on the side- green benas, brocolli, spinach, green salad, etc.

Italian Chicken
Place chicken pieces as above in a baking pan and sprinkle with italian seasoning. Bake for 40 minutes at 350 andremove from oven, pour a jar of spaghetti sauce on top and bake for 10 minutes more, serve chicken and sauce with hot spaghetti and a green salad.

Half a cooked chicken breast per person plus one for the pot. Enough campbells cream of chicken soup to make a nice sauce. don't add much liquid just a little. and you can add either a can of veg-all, or some cooked broccoli. Heat together and serve over cooked rice. You can also make it using cream of mushroom soup, tuna and peas over toast or rice.

INGREDIENTS
1 (28 ounce) can baked beans
2 (16 ounce) packages hot dogs, sliced
1 (7.5 ounce) package corn bread mix


DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C).
Pour the can of beans into a 9x13 inch baking dish so they cover the bottom. Arrange hot dog slices so they cover the beans as completely as possible. If too much juice seeps through to the cornbread, it will take longer to cook. Prepare cornbread mix according to package directions. Spread the batter evenly over the hot dog layer.
Bake for 35 to 40 minutes, or until cornbread is cooked through. A toothpick inserted into the center should come out clean

cheese enchiladas (my family loves these so much!)

- can enchilada sauce (i reccommend La Victoria)
-nough corn tortillas to give each person at least 2 (make more for leftovers)
-as much shredded cheese as you like

preheat oven to 350 degrees

1. pour some vegetable oil in a large skillet (enough to coat the bottom)
2. fry tortillas in vegetable oil on each side until soft and flexible (around 5-10 seconds per side) and put cooked tortillas in layers of paper towels so the excess oil is absorbed. around 4 tortillas oer layer of paper towels.
3.pour enchilada sauce in bowl or pie pan and dip tortillas in sauce
4. put as muchcheese as you like in each tortilla (i put in around 1/4 cup) and roll them up and place in baking dish
5. pour remaining sauce over enchiladas (optional) and put more cheese on the top
6. place in oven until cheese is melted


if you don't want to use oil, you could dip the tortillas in chicken broth to soften them instead.

ONCE I DIDN'T HAVE TOO MUCH MONEY FOR DINNER; SO, I BOUGHT A WHOLE CHICKEN A BAG OF VEGETABLES A COUPLE OF POTATOES(I ALREADY HAD). I SAUTEED SOME ONIONS AND GARLIC WITH THE POTATOES AND, THE BAG OF VEGETABLES BUTTERED SOME BREAD HAD SOME TEA. ALL ARE HEALTHY AND, EXTREMELY INEXPENSIVE.
