What can I make with Left Over Pork Roast?!

bbq pork quesadillas, shred and heat pork and add barbecue sauce. make quesadillas with flour tortillas and shredded monterey jack and cheddar cheeses. heat in skillet.
brunswick stew is another good way to use pork. make a stew from beef stock, potatoes, carrots, baby green lima beans and whole kernel corn and add pulled pork and barbecue sauce.

I chop mine and make b-que sandwiches. You may need to add sauce also...

I am with the first answer, cut it all of the bone, put it in a shallow pan with some barbecue sauce, pepper and seasons and then you will have a great chopped barbecue sandwiches or as they are called elsewhere, pulled pork sandwiches. Oh and save the bone for a nice seasoning in greens or beans (black eye peas/great northern, etc.). God Bless.

For my kids I would take leftover roast (if there was any) the next day and pull it all off, chop it up, and make up a fast pork gravy mix with a little extra liquid, once it's heated up, add the pork and reheat everything.
Spoon that glop mixture on top of mashed potatoes, add a kid friendly veggie, corn or peas...and instant hot meal that sticks to your ribs!
The gravy meat mixture on mashed potatoes means they love to mush it all together-looks good and gross to them but it's still good to eat. Okay, I mush it up too, I love it...
and they'll clean their plates!
gravy mix...if you dont' have the packaged mix or don't want all that salt from the mix-bad for them...melt a couple tablespoons of butter in half cup of milk-don't boil it-just heat it enough to melt the butter-then stir in 1/4 cup of flour to make a thick paste. Then add a half cup of milk to this-you won't get any lumps doing it in steps like this.
Add a couple splats of Gravy Master (small bottle of gravy flavour drippings) and slowly heat it up. If it thickens too much, just add more milk or water to thin it out, but keep it pretty thick-like pancake batter.
Add your meat as it heats up and you'll have a delightful mixture to go on mashed potatoes or even bread or biscuits. Ummmmmmmmm

Make a casserole. Basically use any recipe you already have and substitute the pork into it. I make a potato and pork casserole by dicing up my meat into it or substitue pork for hamb. for sloppy joes.

we are doing this at the very moment, cut it into small strips and add a white wine cream sauce and mushrooms, accompanied with chips (fries) and a green veg, you cant go wrong. Before the moralists jump up and down at the thought of white wine and children, it is flavour don't put too much in
