Not sure about this step in cookie recipe? How to "cream together"?!


Question: Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt.

I researched, and found creaming together means to beat together ingredients until mixture is smooth consistency, light and fluffy. How would I accomplish this with the ingredients listed, adding the flour in the end? I was warned NOT to overmix. Thank you!

To begin with you always want to have dry ingredients and wet ingredients, you usually work with the wet and then add the dry.

First you would cream together the butter, shortening, 1 1/2 cups sugar, the eggs, and the vanilla as stated.

After you have done that you would add the flour, cream of tartar, soda, and salt and mix that in to combine. So yes, the dry ingredients would be the last step. Hope this helps.

The way I read it is that you should cream the first 5 ingredients first and then add the flour etc. That is how I would do it.

Your dry ingredients should be all sifted together so it basically becomes one thing. Then blend the dry ingredients ( a bit at a time works best ) into your wet ingredients

Just stir it up real, real good with a spoon...you'll be all right. Add your dry ingredients last.

When they talk of creaming together this means all liquids and sugars spices, everything but flours gets put together and mixed real well, I do this by hand and it is sufficient for any receipt you will loose all cream texture once you start to add the flour. And yes you can over mix so don't space out and watch the spoon go round and round.

MIX I mix them with the mixer!

Cream just means to get them incorporated. A potato masherwould do fine. Do it just like your mashing potatoes.

Nothing bad will happen by overmixing this mixture, its when you add the flour that you don't want to overmix as it will stiffen up the dough.

First, I would cream the 1st 2 ingredients well, then add the sugar and blend alittle more,drop in the eggs and vanilla and still beat it up just until combined. I would sift the flour, cream of tartar, soda and salt. I would add it to the first mixture and and I would stir it in, I wouldnt use the mixer. I would keep stirring until it is all blended together. This is how i make most of my cookies because most of them say the same thing about creaming something together. My cookies always turn out great. . .

Usually, it's ok to mix well before you put the dry ingredients in. I would recommend using a blender on step one (after butter has softened) mix the dry ingredients in a separate bowl before you add it to the creamed mixture. After you've added the dry ingredients, don't over-mix.

It says don't over mix because after you add the flour the more you handle it the tougher it will become. Just mix it as much as u need to. Good luck!!
