How to make a beef stew?!
Answers: Ive never made it -how do you prepare the stew meat?
To prepare the stew meat--cut it into the size you want. The larger the pieces, the longer the cooking time. Put some flour, salt, and pepper in a clean plastic bag. Drop the meat in, close the top, and shake. Heat some oil on medium heat. Carefully add the meat to the oil and brown on all sides as best as possible. Now you are ready to add your other ingredients. Enjoy.

Recipe for Tasty Beef Stew:
Approx cooking time 2 hrs
1 large casserole pot
1 kg gravy beef
4 potatoes peeled and cut into half
1 litre of beef stock
3 carrots peeled and cut into rings
1 cup of peas
1 diced onion
1/4 cauliflower cut into good size pieces
1 dessert spoon of oil
salt and pepper
1 cup of gravy mixed with water
Heat oil in pot add saute onion
Cut beef into chunks removing any fat
add beef cook until sealed
add stock, potatoes,carrots,cauli,salt and pepper and top up with water until fully covered.
bring to boil then simmer.
** note when potatoes are soft **
add peas and gravy
continue to simmer until gravy is thickened

Cut the meat into bit sized pieces. Dredge them in flour. Put oil in the bottom of your pot. Brown the meat. Add broth or stock to the browned beef. Let it boil for about an hour. Add veggies. Boil for another 40 minutes or so. and voila! Stew.
This recipe can be made just as easily on the stove over a medium/medium high heat. Just be careful not to burn!
Campfire Stew
1 tbsp. butter
1 lb. beef stew meat
1 tbsp. flour salt and pepper
1 large onion, chopped
2 stalks celery, sliced
4 large potatoes, peeled and cubed
1/2 bag baby carrots
1 container button mushrooms, sliced (optional)
1 small can tomato paste
1 gallon water
Heat heavy bottomed pot until very hot. Season flour with salt and pepper, dip stew meat into flour, covering well. Melt butter in pot, add meat and brown well on all sides. Removed meat from pan, add onion and celery. Cover and let sweat 2-3 minutes. Add tomato paste and about a cup of water, scrape brown bits from bottom of pan. Return meat to pan, add potatoes and carrots. Add enough water to cover plus an inch. Cover with a lid and let stew simmer until potatoes are done, adding water as needed to keep from scorching. Ten minutes before serving, add mushrooms and allow stew to come to a boil. Cover and allow mushrooms to cook. Serve.

Just season some flour, a cup or 2. I put seasoned salt....a lot, pepper, onion powder, garlic salt, and celery salt. Season it very heavy becuase it will be a lot of the flavor for your stew.
Use about 1 pound of stew meat. Roll/toss the meat in the flour mix. Heat a couple of tablespoons olive oil or vegitable oil in a skillet, add the meat and cook until done.
In a large pot add 1 can diced stewed tomatos, 2 carrots sliced thick, 1 large or 2 small potatos cubed, 1 onion chopped, 1 clove garlic minced.
Add the meat mix to the veggies, you may need to add a little more water. As you boil the ingrediants together it will thicken. You can add a few bay leaves, and season a little more as you go depending on your personal taste.
Stew is great with buttered sourdough toast, or served in a hollowed out sourdough bread bowl.
BEEF STEW WITH DUMPLINGS
Serves 4.
4 Tbsp. flour
1 tsp. salt
1/4 tsp. black pepper
2 lb. stewing steak, trimmed of fat and cut into 1-inch cubes
1 oz. (2 T.) butter
1 Tbsp. vegetable oil
1 large onion, finely diced
carrots
celery
potatos
2 Tbsp. brandy, warmed (optional)
1 bay leaf
2 pints homemade beef stock
6 oz. mushrooms, wiped clean
5 fl. oz. 5/8 cupsour cream
Dumplings
8 oz. (1/2 lb.) breadcrumbs made from day-old white bread
4 Tbsp. water
2 eggs, lightly beaten
1/4 tsp. salt
1/4 tsp. black pepper
1 1/2 Tbsp. chopped fresh parsley
1 onion, grated
Preheat the oven to warm 325F (170C).
Mix the flour, salt and pepper together on a large plate. Roll the beef cubes in the flour mixture until they are lightly coated.
In a large frying pan heat the butter and oil over moderate heat butter and
add the beef cubes to the pan, a few at a time. Brown them well, adding more oil and butter if necessary. Remove the beef cubes as they brown and place them in a large ovenproof casserole.
If you are using the brandy, put it in a metal ladle. Set it alight and pour it, still burning, over the beef cubes in the casserole.
When the brandy has stopped burning, add the onion,carrots,potatos,celery to the casserole with the bay leaf and stock. Cover the casserole and place in the oven to cook for 2 hours.
While the meat is cooking, make the dumplings. Put the breadcrumbs into a large mixing bowl. add the water, a little at a time, and toss lightly with a fork. the breadcrumbs should be just moistened, not soggy.
Still using the fork, lightly mix in the eggs. add the salt, pepper, parsley, onion and mace.With floured hands, shape the mixture into walnut sized balls.
Add the dumplings to the casserole, with the mushrooms, cover and cook for 30 minutes. Spoon over the sour cream just before serving.
this is what I do: I put flour in a gallon sized baggie with all my favorite spices. I then put a few of the cubes of stew meat in the baggie at a time, shake 'n bake style, shake it up, then put the meat into a deep pot that you have preheated and put oil in. Brown all the meat, then add the potatoes, carrots, and onions with a bunch of water. Keep adding your spices until it tastes the way you like it. The flour that was on the cubes of meat will help thicken the sauce. It's quite yummy, I just made some the other night.
