How'bout some good old-fashioned meatloaf served on a thick slice of toasted wholemeal bread, smothered in a delicious wine sauce and grilled onions? Steamed vegetables with a little butter and fresh herbs and a green salad served on the side. You're a coach, so I'm guessing you enjoy healthy, yet substantial foods. Sticks to your ribs but not to your arteries!
For a dessert, how does a nice compote of fresh fruits sound? Or perhaps an old-timey pudding pie for a special occasion? Maybe just a slice of good ol' pound cake with some jam and whipped cream.
I don't know who you are. What would you do to entice me to cook you dinner? Am I being paid for this? What is my budget? Do I need to provide references? What date do you require said dinner? Are you paying my travel expenses?

Shrimp and scallops in a scampi sauce, side of linguini in mix of marinara and the scampi sauce and broccoli rabe with garlic and oil. Oh and some Arthur Avenue Italian bread with lots of seeds.

My wife does a rib eye with sauteed mushrooms, a gomemade beef gravy, baked potato, some french bread and olive oil dip, and some red wine with a garden salad.

bacon and sausage casserole cooked in rhe oven with onions gravy, sliced potatoes and carrots .
dessert would be chocolate cake with white sauce (sorta like custard)

I have calamari, shrimp, mussels, scallops and clams in a WW/garlic sauce over spinach basil Pasta...or couscous...I made both...

Homemade Chicken Fajita Pizza
1 tablespoon olive oil
1 lb boneless, skinless chicken breasts (2x1/2 inch strips)
1-2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 cup thinly sliced onions
1/2 cup green bell peppers, strips
1/2 cup red bell peppers, strips
Pizza Dough for a 12 inch pizza
1/2 cup mild salsa
2 cups monterey jack cheese, shredded
--Heat oil in large skillet. Add chicken and cook, stirring frequently until lightly browned. Stir in seasonings. Add onions and bell peppers, cook an additional minute or so until vegetables are crisp-tender. Heat oven to 425°. Sprinkle pizza pan with semolina flour and press dough into pan. Pre-bake dough until it is a very light golden brown, about 6 minutes. Remove from oven and scatter chicken over crust, spoon salsa over chicken, spread vegetable mixture over that, and finally, top with cheese. Bake for another 15 minutes until crust is golden brown.
And peanut butter chocolate chip cookies for dessert.

The best enchiladas with spanish rice and beans. With a Margarita on the rocks. So tasty!! With lots of cheese and sour cream and salsa.
CLUB CHICKEN CASSEROLE
1/4 c. butter
1/4 c. all-purpose flour
1 c. chicken broth
1 (14 1/2 oz. can - 1 2/3 c.) evaporated milk
1/2 c. water
1 1/2 tsp. salt
3 c. cooked rice
2 1/2 c. diced cooked chicken
1 (3 oz. can - 2/3 c.) sliced mushrooms (drained)
1/3 c. chopped green pepper
1/4 c. chopped pimento
Preheat oven to 350 degrees.
Melt butter; blend in flour. Add broth, milk and water; cook and stir over low heat until thick. Add salt, rice, chicken and vegetables. Pour into greased 11 1/2 x 7 1/2 x 1 1/2 inch baking dish.
Bake in moderate 350 degree oven for 30 minutes. If desired, top with 1/2 cup slivered blanched almonds, toasted. Yield 6 portions.

I hope you like SEA FOOD, speak now or forever hold your peace. I would fix a lobster I picked out at the market I would also fix a juicey steak. baked potatoe steamed vegies. All this done by candle light.
Steak with au ju sauce, pan fried vegetables, and roasted potatoes.
I*d cook you a huge New Mexican feast...green chile chicken enchiladas, red chile enchiladas, beans, tortillas, sopapillas, posole, tamales, spanish rice
I am a great cook and I would start preparing a day ahead by making a hearty meat sauce with sirloin and lots of Italian sausage and let it slow cook all day.
I would then make a big casserole dish of baked rigatoni with lots of sauce and melted cheese. Before I fed you this though, I would make you a special salad with different Italian meats and some provolone julienned with a homemade Italian dressing.
I would serve a crusty loaf of bread that I made with my own hands.
For dessert I would make a homemade cheesecake and serve it with some fresh berries in a syrup.
and if you don't like that, write me and let me tell you about my curry cornish hens and wild rice stuffing......

Well, if I'm cooking your coming over, there is no way I'm getting out of the house, it is -26 Celsius in Montréal at the moment and until Tuesday..
For starter, I will serve a pipping hot minestrone soup (to warm you up) served with some crusty hot garlic bread.
Followed by a Lobster & Shrimp Casserole with Fennel in a white wine and cream sauce served over green linguine.
And finally, warm Apple Crisp à la mode with a Cappuccino.
Now to help digest our meal we will do the dishes together because I do not own a dishwasher machine.

Sauage Penne Pasta....... Start by browning sauage, adding some spices hot spices, then making cream sauce adding parmasan cheese and garlic, not too much garlic and then combing all with some sundried Tomatos..... Mmmmm you will love this dish....
