Help what to do with a squash?????!


Question: my neighbour just came back from visiting family that grow their own vegies and he gave me some cucumbers and a squash(big green thing it is)..
and i've never cooked with one before...
please any ideas what to do with it...

Slice it lengthwise, and then chop into half moons. Toss with chopped, onions, garlic, salt, pepper, rosemary, and olive oil.
Saute until they are just heated through. Sprinkle with a bit of parmegian cheese and enjoy.

You do not want them overcooked, they will be very soggy and yucky.

Cut it in half, lengthwise. Scoop out the seeds. Place facedown on a microwavable dish. Add a little water and cover with plastic wrap, venting one side. Microwave on high for 10 minutes. Scoop out flesh, add butter, salt and pepper and enjoy!

SQUASH-STUFFED SHELLS

1 (26 ounce) jar pasta sauce
24 jumbo shells
12 ounces of cooked squash or frozen
3/4 cup ricotta cheese
1/3 cup grated Parmesan cheese
1 egg, slightly beaten
2 tbs dry seasoned bread crumbs
2 tbs. dry chives or parsley
1 ts freshly ground nutmeg
mozzarella cheese

This is a good way to use up squash from your garden. Tastes very good.
Preheat oven to 350.

Coat a 13x9" baking dish with cooking spray. Spread half the pasta sauce over the bottom of baking dish. Prepare shells according to package directions.

Meanwhile in a medium bowl, combine the squash, ricotta, parm, egg, bread crumbs, chives and nutmeg. Evenly divide the squash mixture among the shells. Arrange in a single layer in the prepared baking dish. Pour remaining sauce over the filled shells. Top with desired mozzarella cheese.

Cover with foil and bake 20 minutes. Remove the foil and bake for 5 mnutes longer or until hot and bubbly.

Serves 8

Some squash do not keep more than a few months. Cut it into a piece about 4 inches by 4 inches (take out the seeds), and bake it at 425 for around an hour (until a fork goes in easily) scrape it out, add some brown sugar and margarine and see how it tastes. (after cooking it another 15 minutes.)

I cut mine up in slices and cook it with my pasta.

You could also slice it up, bake it and serve it as a side dish with a bit of parmesan, butter or salt.

Poke holes in it with a fork. Microwave for 10 minutes or so. Cut in half nd remove seeds and stringy stuff. Fill cavities with a mixture of butter & brown sugar. Pop back in micro just a few seconds to let butter & sugar melt. This is delicious.

I cut mine up put it in a bowl and sprinkle it with spices and cook it in the microwave for 7-10 minutes. When its done I put butter on it and enjoy.

Yellow Squash Casserole

Ingredients-
8 yellow summer squash, cut into 1/2-inch slices
1/2 cup white wine
2 eggs
1 cup shredded Cheddar cheese
salt and pepper to taste

Preparation-
Preheat oven to 325 degrees F (165 degrees C). Grease a 9x9 inch baking dish.
In a saucepan, boil sliced squash in enough water to cover for 10 minutes. Remove squash to paper towels. Dab off excess moisture.
In a medium bowl, beat eggs together with wine. Add squash and cheese. Season with salt and pepper to taste. Then pour mixture into a baking dish.
Bake in a preheated oven for 1 hour.

easy just cute in 1/2 long ways then cute in inches place in frying pan with butter and add salt and pepper to taste
