Beer Brats

1 medium onion, sliced
2 peppers, sliced (I had minis on hand and used about a dozen)
1 tablespoon oil
2 bottles or cans of beer (I used some old Steinlagers from the fridge, which were perfect because I believe that they were left there by Jason)
2 vegan sausages (not tofu dogs!!!)
2 hoagie rolls
Salt & pepper to taste


Heat the oil in a skillet over medium heat. Add the onions and lower the heat. They will spend the next 30 minutes caramelizing in the skillet. Sautéing the onions over low heat like this releases the natural sugars in the onions, which causes them to turn a light brown with a glossy coat.

In the meantime, bring the beer to a boil over medium heat. Add the sausages and lower to a simmer. I simmered mine for about 40 minutes. The rule of thumb with beer brats is the longer the better, so if you have the time go ahead and toss them in the beer earlier and let them simmer for 1-2 hours (while keeping an eye on the beer – you made need to replace some along the way due to evaporation).
After the onions are good and caramelized, add in the peppers and let them sauté for 10-15 minutes. Remove from heat and season with salt and pepper to taste. (Be sure to mix the peppers with the onions in the pan. The picture below was taken immediately after adding the peppers to the pan.)
Remove the brats from their beer bath. (I removed my onions and peppers from their pan and tossed the sausages in and sauteed them for about 3 minutes, just to give them a crispy outside. You may choose to skip this step for the more traditional brat texture.)

Assemble your brats. (I tend to perform the cardinal sin against brats – I choose ketchup over mustard.)

I just boil mine in beer, then grill them on a grill till they get nice and browned.
Put it in a bun, add some sauerkraut and chopped onions, ketchup, mustard.

We boil ours in Killian's beer for about 30 min, then coat them with BBQ sauce and grill them. Put them in a bun, and top how you like.

Precook brats in your favorite beer with lots of sliced onions.
Do not over cook them.Simmer for about 10 mins.no longer.
You only want them 1/2 done.Have your grill ready and grill until done and brown.You can fry them if your prefer.
Have another pan or crockpot ready with beer and onions.Keep brats warm in this until serving.
