I am in a Salsa making contest and i need a good recipe that would win 1st 2nd or 3rd place!?!
Answers: The judge said that he likes a mix of mild and hot. he does not like a non-hot recipe. he is from texas and from where he comes from in texas , they love hot-mild Salsa!
Pico de Gallo con Aguacate
* 6 medium Tomatoes diced
* 1 medium Onion diced
* 1/4 cup fresh Cilantro chopped.
* 2 to 4 Fresh serrano or jalape?o seeded and minced
* 2 Ripe Avocados Diced
* juice of 1 lime (prevents Avocados from turning black)
* salt to taste
* The Secret Ingredient - Wishbone Italian Salad Dressing (enough to dampen)
* Toss and Serve..
Great with Tostados, Doritos, Fritos, Corn Chips, or just rolled up in a tortilla (I prefer white corn) or can even be heated on a grill in a flour tortilla..
Chase with a Negra Modelo or a Bohemia, or even a Corona or Carte Blanca.

My moms salsa is soo god. She uses tomatoes, salantro, onion, garlic and jalepenos's i dont know the exact measuerments. But try different things out, you will figure it out.

My recommendation is pick a type of Salsa that you think no one else will make, so that your Salsa will stand out, be unique, and most importantly, WIN!

the best recipes come from experience, testing and practice. come up with a basic recipe you like, then start experimenting, add a little of this, a little of that, taste, add, remake, test on friends, etc.

8 large tomatoes, deseededed
1 small red onion, chopped finely
1/2 green pepper
1/2 red pepper
Tabasco Sauce *
2 cloves garlic
1 cup tomato puree
1 tbsp white balsamic vinegar
2 limes - juice of
* Tabasco is an essential ingredient to salsa- it transforms the flavour from vegetables to salsa.. when its all combined its not actually that hot- and you don't need alot. Just add a drop at a time and keep tasting it. Also, keep all the ingredients at room temperature- i don't know why but the flavours just bind better
Directions:
1. Chop tomatoes finely. Place in a sieve with a sprinkle of salt and vinegar, and let the juice drain a bit.
2. Roast or chargrill the peppers and peel off the skins. Chop those finely, along with the onions. When I say finely, i mean like almost to the point where its minced. But it should definately not be chunky. Crush the garlic. Add all ingredients except the tomatoes to a bowl. Press the tomatoes against the seive gently to remove excess water, and add this to the salsa.
3. Flavour with lots of freshly ground pepper, and a bit more salt and vinegar, and the last ingredient - tabasco. Add it in drops and taste until perfect! You can add coriander etc but I think its more pure without herbs and spices..
TIP: Make sure you let it sit in the fridge overnight before the contest, as more water will come out. Drain this off and season again with vinegar if it needs it.
do you have to use fresh ingredients or can you you canned?
I would suggest something like this recipe. It's from rotel, but if you add the cilantro, it isn't exactly the same.
BTW you judge is used to Tex-mex food. Tex-mex is a specific cooking style and not truly Mexican.
Rotel Salsa
Ingredients:
1 can Rotel Tomatoes -- Drained
2 each Green Onions -- Chopped Fine
1 Clove Garlic -- Minced
1 large Tomato -- Chopped
1/2 Lime, Juice Only
1/2 teaspoon Salt
4 oz can green chiles
1/2 bunch chopped cilantro (use some of the extra cilatro as garnish)
Directions:
Mix all ingredients. Chill.

You may need to adjust the spices a little depending on the taste. You can either leave it chuky or chop it finely. Make sure the onions and cilantro and chopped fine!
