Brownies after they are cooked?!

Answers: I followed a classic hershey brownies recipe, I took the brownies out just a few minutes ago, put a knife through it and it seems very unstable, like my knife just glided right through it.

You don't want brownies to test completely done in the center. If you used a toothpick to check, for example, you would want some brownie to cling to it. It's very difficult to tell when brownies are done just by looking, so it's best to trust the baking time in your recipe. Brownies will firm up as they cool.
