Brownies after they are cooked?!


Question: I followed a classic hershey brownies recipe, I took the brownies out just a few minutes ago, put a knife through it and it seems very unstable, like my knife just glided right through it.
Is it supposed to be like this?
Will it get harder?

You don't want brownies to test completely done in the center. If you used a toothpick to check, for example, you would want some brownie to cling to it. It's very difficult to tell when brownies are done just by looking, so it's best to trust the baking time in your recipe. Brownies will firm up as they cool.

  • Sounds like they need to cook longer. A toothpick once inserted in the middle should come out clean and that is when they're done. Give them a few more minutes. No, they won't become harder if you don't cook them longer.

    If you cooked it exactly the same number of minutes as package directions called for, and your oven was set to exactly the same temperature required (usually 15-18 minutes at 350 degrees F., if I remember right) and it's all runny like that and sticking to the knife ("unstable") then maybe your oven is running "cool". The next time you fix that type of brownie try setting the oven 5 degrees "hotter" like to 355 and then cook for the same time and see if the toothpick trick (described by the other lady here) comes out clean. If it does, then you are doing it right.

    In the mean time, having runny brownies is not going to kill you now. If you are eating them yourself, just eat them, don't sweat it! :-) Gooky is Good!! If you are trying to make the perfect cute brownies for your friend(s), don't sweat it. You can do one of two things - cook them another 5 minutes or so, and then let them cool before you cut any more (that does make a difference - just letting them cool a few minutes BEFORE you cut them). Or just nonchalantly dip them up into bowls and then pile ice cream on top, and no one will know the difference!!

    They're underdone. Next time cook them 5 minutes longer
