Suggestions for "fancy" meal?!


Question: I consider myself an OK cook, but most of the time I just make quick dinners. However, my most special recipe is duck with cherry sauce. It is a recipe from a French country cooking book and it is really great. It is perfect with red wine. Anyways, this is my one and only "fancy" meal, and I have been making it for a few years, so most of my friends have had it already. Can you suggest a new dish? I would like something that seems special and out of the ordinary, but that will also appeal to a lot of people. I also need something that is not spicy and does not have tomato sauce, because my husband gets terrible heartburn. Thanks in advance for your suggestions!

1. Chicken Marsala
2. Linguini with a white cream sauce and seafood.
3. Sheppard's Pie
4. Roasted lamb shank (aka osso bucco)

There are many ways to make the above mentioned dishes. You should google and find your favorite None of these dishes contain tomatoes in it.

My favorite way to make osso bucco is to rub it with rock or kosher salt, stick it with cloves and roast it in the oven.

I also cheat sometimes with cheppards pie and use a brown gravy packet with the beef instead of making my own gravy.

For the white sauce, I start with a roux (equal part butter to white flour and mix in cream or 2% or more fat milk on low heat constatnly stirring so you don't scorch the milk) and add what ever seafood you want. I like sautteed scallops or clams (cooked live or from a can.)

Chicken marsala . . . I saw Martha Stewart make it once. It taste different every time I make it because I change the brand and type of white wine for the sauce. I also switch up the mushrooms from button to crimini or chantrells. You can make it more fancy by using truffes. It's always good and it's a hit with all my friends.

My mom makes cornished hens (seasoned how you prefer, poultry) and we each get half a one... serve with some boiled red skin potatoes with some butter and parsley and sweet baby carrots and it looks pretty nice in my opinion!

Le Marriage, Alfredo Algerie


This unique contemporary North African pasta dish combines Algerian, French, and Italian culinary sensibilities into one beautiful pasta featuring a white sauce with bite-sized chicken pieces. Serve over bow-tie, rotini, cheese ravioli, or tortellini pasta.

INGREDIENTS
3 tablespoons olive oil
1 boneless, skinless chicken breast, cubed
1/4 teaspoon cayenne pepper, or to taste (or you can omit)
1/2 teaspoon ground white pepper
5 cloves garlic, pressed
1/8 cup water
1/2 cup butter
5 saffron threads
1 (8 ounce) package cream cheese
1 1/2 cups cream
1/2 cup freshly grated Parmesan cheese
1/2 teaspoon salt, or to taste
splash of milk


DIRECTIONS
Warm olive oil in a large skillet over medium heat. Place the chicken pieces in hot oil; cook, turning, until browned on both sides. Stir in cayenne, white pepper, and garlic. Pour in water, and cook until the chicken is done and the water has evaporated, about 30 minutes.
Stir in butter and saffron threads; cook for 10 minutes. Add cream cheese, stirring until melted and smooth. Gradually whisk in cream, smoothing out any lumps. Stir in Parmesan, and cook until the sauce reaches the consistency you like. If it becomes too thick, stir in a small amount of milk

I LOOOOVE duck with cherry sauce, that is what I was going to recommend just from your intro until I read further. So now I must recommend :

1. Garlic crusted Prime Rib roast w/red wine reduction

2. confetti garlic mashed potatoes- julienne carrots, green bell pepper, red bell pepper, and onions then saute in butter pour over garlic mashed potatoes

3. broccoli & cauliflower casserole- break vegetables up in a baking dish, pour heavy cream over, salt and pepper, add butter, cream cheese and shredded cheddar, mix and bake 30-45 minutes.

Cream Chicken with mashrooms.
Ingredients:
1 kilo of chicken
1medium of onion
3or4 clove of garlic
half kilo of mashroom
3or6 table of spoon of olive oil and 1tub or small of cream
Procedure:
fry the garlic,onion, add the chicken cover leave for 20 minutes or when the chicken little bit soft the add the mashroom leave for 5min.and add the 1 tub or bottle of ceam.
Serve hot & decorate the corrienda herbs.

Get yourself a box of Barrilla ready bake lasagna pasta. On the back is a recipe for lasagna that doesn't require boiling the noodles first.
I make that recipe, but I use buffalo mozzarella, fresh ricotta cheese mixed with eggs and freshly grated nutmeg, and layer in rinsed, chopped fresh spinach between the meat and pasta layers for a Florentine style. I also add sliced mushrooms if they look good at the market.
For a vegan recipe, use walnuts and steamed broccoli spears in place of the meat in the marinara sauce.
Serve with a huge green lettuce salad with vinaigrette dressing.

Try a delicious crown roast. It's really easy but very special. To make the gravy out of this world good, add about a half cup of cognac to the basic gravy(meat drippings,s&p, garlic, and slurry (flour&water)). Every time I make it I get tons of compliments. The cognac trick works for any pork gravy.
