What kind of Fish

What type of fish are you cooking?

Get a piece of cod sprinkle a bit of salt and lemon on wrap in tinfoil and steam in a steamer until cooked is really nice.

Also steamed salmon in tin foil is really nice

Fish are not particularly intelligent, and useless in the kitchen.

I bet if you asked one to measure out 150grams of flour it would just stare at you and go "bob" with its lips.

I have made a fish pie tonight which was with white wine sauce, leeks and broccoli, with mash on top!!! yummy and the kids ate it too!

equal parts (about 1/4 cup of each depending on how much your making)

brown sugar
soy sauce
Jim beam

marinate salmon filets for about 4 hours then grill or broil til done, enjoy.

Here are a couple of ideas that I have used and they work for most fish - Orange Roughy, Tilapia, Halibut, Salmon, etc.

Preheat the oven for 350 or 375. I put the fish on aluminum foil and either put a little white white and some sliced onions or I put lemon slices (and some lemon juice) and dill on the fish. The wrap up the foil to seal the fish in a packet and place the packets on a cookie sheet (one packet per piece of fish). Bake for approximately 25-30 mins. Voila! Yummy fish.

It really depends on what type of fish your cooking, but just bake it in melted butter and add a little lemon or lime juice and salt and pepper.

Rainbow trout:

A/. Gut and wash the fish.
B/. fill cavity with your favourite - i.e. mushrooms, onion, peppers.
C/. soak in water about 9-10 pages of a large newspaper.
D/. Wrap the fish in the soaked paper.
E/. Oven on hottest.
F/. Place fish (wrapped in newspaper) in middle of oven for 15 to 20 minutes.

When you remove the fish and peel away the newspaper, you will find that scales of the fish are all on the newspaper.

And the fish tastes brill` as it was cooked in it`s own oil.
:-)

Salmon coated in crushed peppercorns put into a shallow pan with a little water lemon slice and half cup white wine cook for 4-5 mins but keep an eye on water content. Serve with new pots and side salad

My favorite fish dish is Skate Mulls on Toast just roll them in flour and fry them and serve on toast. Mulls are the best part of the Skate the local fishermen normaly keep them for themselves P.S they are the muscles of the jaw bone you will have to find a good fishmonger, but it will be worth the trouble'

Hi hon! Try this one... it works well with most fillets/steaks of white fish:

Preheat your oven to Gas Mark 7, (425F/220C) (Serves 4 people)

You will need:-
4 Single size thick fish fillets (Cod, Halibut, Monkfish etc)
2 slices of Back Bacon (rinds removed)
2 medium carrots (thinly sliced)
1 Celery Stalk (very thinly sliced)
1 large Onion (finely chopped)
4 oz (110g) of mushrooms (thinly sliced)
10 fl oz (275ml) of dry white wine
2 tablespoons chopped parsley
1/2 teaspoon of dried thyme
4 slices of lemon
2 oz (50g) of butter
Salt and Pepper to taste.

Start by laying the bacon slices in a well-buttered buttered baking dish which is large enough to fit the fish steaks in. Sprinkle over the carrots, mushrooms, celery and onion followed by the wine. Cover tightly with foil and bake for 30 minutes. Remove dish from the oven and put the fish steaks on top then sprinkle them with the parsley, thyme, salt and pepper. Place a lemon slice on each fish steak and dot with a little butter. Cover the dish again with foil and bake for a further 20 minutes. Serve with the vegetables of your choice and.. ENJOY xx

a nice bit of any fillet of fish you've got, breadcrumbs, fresh squeeze of lime, corriander and red chilli...in the blender and crumb it over the fish..in the oven for 15-20 mins at med-high heat..lovely

My fav is Monkfish in a five cheese and garlic butter white wine sauce served on a bed of Hot salad or saffron rice.
Lightly cook the fish in a little water ,milk, and olive oil with a herb package in the water.
Pick five cheeses which are not to strong and make sure one has chives in .I go for the mini range in Morrisons.Put in a pan with a knob of butter and garlic puree heat until melted then put in the still wine OR cider if you prefer bring back to the boil take of as soon as it boils.PS stir all the time so it does not stick.
HOT SALAD:-lettuce peppers red onion shredded carrot spring onions cucumber & radishes.
Put peppers, onions carrot and sliced radish in a hot wok cook until they just go soft then put the lettuce in and stir in for no more than 15 seconds.Tip onto plate put fish on top and smother with th sauce.
For the rice put some saffron in the water along with a good pinch of cinammon and nutmeg and a little cayenne pepper if you like food a bit spicy you could even put some chinese five spice in if you like once ready dish out as above.
Any white fish will do you could even use fresh tuna steak or even shark works well .
ENJOY
