BANANA FRITTERS

Imperial:

6 bananas, cut into sm. chunks
2 tbsp. sugar
4 oz. plain flour
1 egg white
Pinch of salt
Oil to deep fry

Metric:

American:

6 bananas, cut into sm. chunks

Make the batter by sifting the flour and salt into a bowl with a tablespoon of cooking oil and a small amount of water. Mix well. Add more water and beat to a coating consistency. Whisk (whip) the egg white until stiff and fold into the batter. Use immediately. Dip each chunk of banana into the batter using a long pointed stick or fork, hold over the bowl for a few seconds to allow excess batter to drain off, and deep fry until crisp and golden. Drain on absorbent paper. Serve hot, sprinkle with sugar. Pineapple fritters can be made by the same method.

2 small bananas, peeled and sliced thin crosswise
2 ounces fine-quality bittersweet chocolate (not unsweetened), chopped fine
1/4 cup heavy cream
1/8 teaspoon vanilla
preparation

Preheat oven to 425°F.
Divide half of the banana slices between two 1-cup ramekins and sprinkle half of chocolate over them. Arrange remaining banana slices over chocolate and top with remaining chocolate.

In a bowl stir together cream and vanilla and pour over mixtures. Bake desserts in middle of oven 10 minutes.

I like to sprinkle toasted almonds or cashews on top.

Ingredients:

* 4 ripe Bananas
* 100 g Belgian dark Chocolate, broken into squares

Method:

* Using a knife spilt bananas along their length and push a few square of chocolates into the splits.
* Wrap each banana in foil and barbecue for 10-15 minutes or bake at 200 c/ Gas mark 6 for 15 minutes.
* Serve the bananas with chocolate ice cream or pouring cream.

Mix together: 1 cup flour, 1 tsp baking powder, 1 egg, 1 cup water, a few drops vanilla. Add chopped bananas. Drop by the tablespoon into very hot oil until golden. Dust with powdered sugar, or drizzle with chocolate sauce.
