well i use minced meat beef preferably but u can use chicken or mutton too
1 kg minced meat

3medium sized onions finely chopped

3 to 4 cloves of garlic crushed

a teaspoon of ginger

green chillies according to ur taste i use 4 to 5 finely diced

fresh corriander leaves finely chopped

about 1 teaspoon of crushed dried red chilli (not powder crushed ) u can add if u like it hot

salt to taste red chilli powder 1 heaped teaspoon

garam masala 2 teaspoons

chat masala 2 to 3 teaspoons ( it makes the kabaab tangy )
mix all these in the minced meat

ssoak about 3 slices of bread in a bit of water ,squeeze hard to drain the water and mix the slices in the mince (this helps in binding)

add an egg to the mixture

mix well and make the kabaabs in the usuall typical shape
fry one or two and check the salt and seasoning
add to it if u feel like!
i usually serve them dry
but some times i make a sauce along with it it tastes great
do let me know if u try out this recipe and like it then ill give u the gravy recipe too

Hot, and I Meam Hot, Miniature Beef Kabobs

Marinade
1/2 cup soy sauce
1/2 cup veg. oil
2 tablespoons dry-roasted sesame seeds
2 tablespoons brown sugar
1 tablespoon minced cilantro
1 tablespoon minced garlic
1 tablespoon minced ginger
2 small fresh Hawaiian chile peppers or jalapenos -- minced
1/2 teaspoon sesame oil
1/2 teaspoon white pepper

Kabobs
1 1/4 pounds flank steak -- cut in 3/4" cubes
8 ounces whole mushrooms
2 large onions -- cut in 1/8 ths
Bamboo skewers, soaked in cold water at
least 30 min.

Teriyaki Glaze
1 cup soy sauce
1/2 cup mirin Japanese rice wine) or dry sherry
1/2 cup water
1/4 cup brown sugar
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced ginger
1 tablespoon cornstarch
2 tablespoons water

1. Combine all marinade ingred. in large non-reactive bowl. Add meat cubes and
rub marinade by hand into meat for several mins. Let meat marinate for 45 min.
2. Combine all ingred. for glaze, except cornstarch and 1 tbl water. Bring to
a boil. In a separate bowl, blend cornstarch and water to make a smooth paste,
then add to the boiling ingreds. on the saucepan. Reduce heat and simmer,
stirring frequently, until glaze is thickened. Remove from heat and set aside.
3. Thread meat cubes onto skewers, starting and ending with a mushroom cap,
with chunks of beef and chunks of onion alternating in between.
4. Cook meat on each side for 2-1/2 min. ( for med-rare) over hot coals or on a
griddle. Serve hot with Teriyaki Glaze brushed over each serving.

Teriyaki Finger Steaks

2 pounds boneless sirloin steak
1/2 cup soy sauce
1/4 cup vinegar
2 tablespoons brown sugar
2 tablespoons minced onion
1 tablespoon veg. oil
1 clove garlic -- minced
1/2 teaspoon ground ginger
1/8 teaspoon pepper

Trim fat from steak and slice lengthwise into 1/2" strips; place in large glass
bowl. Combine all remaining ingred.; pour over meat and toss gently. Cover and
refrigerate for 2-3 hrs. Drain, discard marinade. Loosely thread meat strips
onto skewers. Grill over med-hot coals, turning often, for 7-10 min or until
meat reaches desired doneness.

Seekh Kebab is made of minced lamb.
Mince Lamb 500
Onion Finely chopped 1/2
Chopped coriander 100 grams
Green Chilly chopped 1
chopped ginger and garlic 1 teaspoon
Lemon juice 2 tbspoon
Salt to taste
Garam Masala 1 teaspoon
Mix them all together and roll it on a bamboo skewer and grill it.
Mint chutney goes well with it.

i would go with the answer above i from jorda and it a midetranian dish its form mince lamb meat miced chilli minced garlic if u like a lot of minced parcly minced oinion salt peper combine all together put on skewers i prefer iron one and grill bona petit

Mix all the ingredients except Cornstarch . Sprinkle Cornstarch Tablespoon at a time to knead the mixture like dough. Adjust amount of Cornstarch for dough like consistency. Let it rest for two hours. Pinch about 4 ounces off the mixture. Cover the Bamboo skewer with the mixture about ?" thick along the length. The meat will look like a cigar which has been pierced length wise by the skewer. Preheat oven to 375o F. Bake for 25 minutes. Serve hot.

5. Finely chopped Serrano: 2(remove seeds and white membrane to reduce heat as desired)
6. Ground Cumin Powder: 1 Tablespoon
7. Ground Coriander: 1 Tablespoon
8. Ground Cloves: ? teaspoon
9. Ground Cinnamon: 1 teaspoon
10. Ground Red Chilli : 1 teaspoon
11. Salt: 1? teaspoon(as per taste)
12. Lime Juice: 1 Tablespoon
13. Yogurt: 2 Tablespoons
14. Cornstarch (chickpea flour): ? cup
and 10 water soaked Bamboo Skewers for grilling.
