Thinking about making a light chix dish. I was thinking of using with some sort of fruit and veg. any ideas?!
Answers: poach boneless skinless chicken breasts and pear halves in broth with a little white wine added. to season the broth, add a little salt, a chopped onion, a little cracked black pepper. remove pear halves & chicken breasts from poaching liquid & keep warm. dissolve 2 - 3 tbsp. cornstarch in cold water. bring poaching liquid to a full boil & pour in cornstarch slurry. serve over the chicken with pear halves on side & perhaps some wild rice.
I like to add chicken to pasta. I'll make a bowl of pasta, add some slices of chicken in, add peas, corn and sliced tomatoes. Then I put in some good seasons Italian dressing and sometimes some basil or oregano. It's a little unusual, but I like it, and you can substitute any of it with something you like.
CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3-4 chicken breasts, cubed
1 large cucumber
1 onion, sliced thin
1 tsp. ground cumin
1 tsp. ground mustard
4 cloves garlic, minced
1 cup chicken stock ( 1 cup water and 1 chicken boullion cube works too)
1 cup sour cream
1 1/2-2 cups cooked rice
Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Return chicken to pan, stir. Serve cucumber and chicken sauce over rice.
I like to marinate boneless, skinless chicken breasts in lemon juice and garlic for 2-3 hours-overnight, then bake or grill. You can baste this with apricot preserves. It is a delicious light chicken dish.
