I have a bunch of elk and venison breakfast sausage...I need dinner meal ideas for it.?!

Question: 1/2 cook your pinto beans in water, w/salt, garlic, pepper added. When half done add about 4 chopped tomatoes, 1/2 a chopped onion, crumbled/chopped sausage, and a bunch of fresh cilantro cut into thirds. Simmer until beans are done. Serve with corn/flour tortillas. These are called frijoles del rancho- I made them for new years, and they got all eaten!!

sausage cacciatore?? I make this at home with turkey sausage and it is delicious!

Here's a couple ideas:

Sausage and Onion Fritatta
Sausage Layered Overnight Strata
Hash Brown & Sausage Casserole
Sausage, Pepper and Onion Heros
Add the browned crumbled sausage to spaghetti sauce......

I don't know if you have the sausage in bulk or casings, but you can use it in just about any recipes that you would use ground beef, ground pork or ground turkey with as meat base.....like, say, Sloppy Joes......etc........

Christopher

They go really well with caramelized red cabbage and dauphinoise potatoes

Substitute your meat instead of hamb. and make a meatloaf or make elk/venison sloppy joes. The meatloaf needs to be baked 20 - 30 mins. longer.
