Garden Omelet with Smoky Cheddar and Apricot Cream

Ingredients-
4 eggs
1 tablespoon water
1/2 cup shredded smoky Cheddar cheese or Cheddar cheese
1 tablespoon vegetable oil
1 teaspoon snipped chives
Filling:
1 teaspoon vegetable oil
1 (19.5 ounce) package JENNIE-O TURKEY STORE? Apple & Brown Sugar Turkey Sausage
1/4 red bell pepper, cut into 1/4 inch strips
1 slice onion
1/2 cup broccoli florets
4 pea pods
1 tablespoon shredded smoky Cheddar cheese or Cheddar cheese
APRICOT CREAM:
1/4 cup dairy sour cream
2 tablespoons apricot or peach preserves

Preparation-
In small bowl, combine sour cream and apricot preserves. In medium bowl, lightly beat eggs and water; season with salt and pepper. In 10-inch nonstick skillet, heat 1 teaspoon oil over high heat; add remaining filling ingredients. Cook and stir 3 to 5 minutes or until vegetables are crisp-tender and turkey sausage is browned; remove from skillet.
Heat same skillet over high heat until very hot; add 1 tablespoon oil. Working quickly, add egg mixture all at once to skillet. Using a heat-proof rubber spatula or large spoon, scrape the egg mixture from the outside of the pan to the center, tilting the pan continuously to allow the uncooked egg mixture to flow underneath. When the surface of the omelet is still shiny, sprinkle with 1/2 cup cheese. Remove from heat. Spoon turkey sausage and vegetable mixture over half the omelet; fold the other half over. Sprinkle with remaining 1 tablespoon cheese and chives. Serve with apricot cream.

eggs and anything else you want to put inside it. I like sauteed onions, bacon and cheese.

As long as you start with the base of eggs (some people add 1TB of milk per egg to make it fluffier - I do this too), it really doesn't matter what you put in it. When I make omlettes I usually beat my eggs with some milk, then pour the mixture into a warm non-stick pan and once it's almost completely cooked I add shredded cheese and whatever else...I prefer ham, hubby likes steak and veggies (what's called a "Colorado Omlette") - you can put pretty much anything inside. That's the beauty...

1 egg/serving
1 tsp. milk/serving
1 sm. fry pan

OPTIONAL:

Sliced pepperoni
Ham pieces (small)
Sliced cheese (own choice)
Green peppers

In a small bowl beat 1 egg per serving and 1 teaspoon milk per serving. If one desired crepes instead of omlettes simply change water for milk.
Into small pan (does not have to be omlette pan) pour a 1 serving worth of mix on top of melted butter.

As it fries to almost done, add the desired ingredients, flip one edge over with spatula and serve plain or with additional topping such as cheese sauce, ketchup

An omelette is usually made with three eggs that are beaten together and poured in to an omelette pan or other non-stick frying pan. It initially looks like a round pancake until you fold in the two sides (like a burrito) and flip it over. Some people add cream or milk and claim it makes it more fluffy, but it doesn't. You CAN whip the egg whites separately first, then fold in the yolks and this will make it more fluffy, but is more work than it's worth and is not too traditional.

Now as far as ingredients go, the sky is the limit. The omelette itself is done with just the eggs and the shape. You can add everything from green onions, shredded cheese, and mushrooms to pepperoni and ham. A veggie omelette usually has onions (you can cook them ahead of time or just use raw chopped tiny), mushrooms, tomatoes, green peppers, and cheese like cheddar or swiss. You can make them with ground beef, ham, even salmon and shrimp too! You can make an easy white sauce to pour over the top out of cheese and milk/cream as well.

If you leave it open in the pan and add your ingredients, then bake it until it's done, you'll have a fritatta!

Take 3 eggs, 1/4 cup of chopped velveeta cheese, ham, sausage, bacon bits,that's what I like. If you like you can add peppers and onions.
