I think pasta is always a hit. Here are three great recipes, and my homemade garlic bread recipe. Serve the pasta with garlic bread and a nice green tossed salad with homemade salad dressing, or try my Caesar Coleslaw recipe. It always gets raves. Have fun!!

Fettucini Carbonara
1/2 pound bacon
1/4 cup whipping cream
4 beaten eggs
1 pound fettucini, cooked
1/4 cup butter, melted
1 cup grated parmesan cheese
1/4 cup snipped parsley
Heat oven-proof serving dish in 250 degree
oven. In skillet cook bacon till crisp. Drain; crumble. Heat cream till just warm. Remove from heat; beat in eggs. Toss pasta with butter. Pour egg mixture atop. Toss till well-coated. Add bacon, cheese, and parsley; toss to mix.
Sprinkle with pepper. Serves 6.

Chicken Scampi
(easy but delicious and elegant)

1/2 cup butter
1/4 cup olive oil
1 tsp dried parsley
1 tsp dried basil
1/4 tsp dried oregano
3 cloves garlic, minced
3/4 tsp salt
1 Tbsp lemon juice
4 boneless, skinless chicken breast halves, sliced lengthwise into thirds

In a skillet heat the butter and olive oil on medium high heat until butter is melted. Add parsley, basil, oregano, garlic and salt and mix together. Stir in lemon juice.
Then add chicken pieces and saute for 3 minutes or until white. Lower the heat and cook for about 10-15 mintues or until chicken is cooked through. More butter can be added if needed. Serve chicken over hot angel hair, or other pasta and pour some of the sauce over it all.

Traditional Shrimp Scampi
Preparation time: 30-35 minutes but if you purchase your shrimp already peeled and de-veined the prep time should be reduced to about 15 minutes. Serves 6-8.


Ingredients:
2 pounds medium-size fresh shrimp (either 16-20 count or smaller ones), peeled and de-veined or unpeeled and un-deveined
1/4 cup chopped green onions
1/4 cup chopped fresh parsley
4 cloves garlic, crushed
3/4 cup butter, melted
1/4 cup dry white wine (chardonnay or pinot grigio)
2 tablespoons lemon juice
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Parmesan cheese, freshly grated

Instructions:
Peel and de-vein shrimp unless you purchased P & D shrimp. You may choose to butterfly the shrimp as well (see note below)
Sauté green onions, parsley, and garlic in butter until onions are tender
Reset heat to low and add shrimp. The shrimp should be added in a single layer on the pan (cook two batches if necessary or use two pans).
Continue cooking, stirring frequently for 4 to 5 minutes
Remove shrimp with a slotted spoon to a serving dish and keep warm
Add remaining ingredients to butter mixture and simmer for 2 minutes
Pour butter mixture over shrimp

Serve this shrimp recipe over linguine or Angel Hair pasta. If you wish to do likewise, cook about 1 pound of the pasta of your choice. Add freshly grated Parmesan cheese on top.



Homemade garlic bread:

1 cube real butter
3-4 cloves garlic, minced

Saute together about 5 minutes.
Spread on fresh sliced french bread with a pastry brush. Heat under the broiler until light brown. Yummy!!

Caesar Coleslaw

1 pkg pre-made coleslaw
1/4-1/2 cup shredded parmesean cheese
1/2 pkg caesar croutons
1 bottle creamy caesar dressing

Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!

Better Than Sex Cake

A popular chocolate cake with loads of chocolate, caramel topping, candy bars and whipped topping.
INGREDIENTS:

* 1 German chocolate or other chocolate cake, baked, 13x9x2-inch
* 3/4 cup fudge topping
* 3/4 cup caramel or butterscotch topping
* 3/4 cup sweetened condensed milk
* 6 chocolate covered toffee bars
* 1 tub of whipped topping or 1 envelope Dream Whip, prepared with milk

PREPARATION:
Do not remove cake from pan. After the cake has cooled, make holes in the entire top of the cake using a large fork or the handle of a wooden spoon. Pour (one at a time) fudge, butterscotch, and condensed milk over the top of the cake and let each flavor soak in before adding the next.

Crush 3 of the candy bars and sprinkle on the top. Frost the cake with the whipped topping and crush the 3 remaining toffee bars to decorate the top. Try to keep your hands off of this great cake before serving!
Serves 12

just a hunch...MOROCCAN LAMB WITH FRUIT & HONEY

1 tbsp. salad oil
2 lbs. boneless lean lamb, cut into 2 inch cubes
1 sm. or med. onion
1 tsp. ground coriander
1 stick cinnamon
1/2 tsp. black pepper
1/4 tsp. ground ginger
2 c. water
2 beef bouillon cubes
1 (6 oz.) pkg. dried apricots
1/2 lemon, thinly sliced
1/4 c. mild honey
1 to 2 tbsp. toasted sesame seeds

Pour oil into 4 quart Dutch oven or heavy pan. Add meat, onion, coriander, cinnamon, pepper, ginger, water and bouillon cubes. Bring to boiling, cover and reduce heat - simmer for 45 minutes. Uncover and cook 30 minutes more until lamb is tender.
Add apricots, lemon slices and honey. Stir in gently and cook until fruit is tender, but still holds its shape. Remove meat and fruit with a slotted spoon to a heat proof platter and keep warm at 200 degrees. Increase heat under juices and boil until thickened. Pour over meat, top with seeds and serve. Good with rice and green salad. Serves: 4 to 5.

german chocolate cake with cocnut frosting

I tried this recipe a couple of months ago and the fmaily went wild. Basically you use anything you like in pizza. I used 1lb sweet italian sausage in the mix with the rest

1 pound pasta curls (recommended: campagnelle by Barilla; short fusilli or cavatappi twists may be substituted)
Salt
1 cup ricotta cheese
1/2 cup grated Parmigiano-Reggiano cheese, a couple of handfuls
Handful parsley, finely chopped
1/2 cup sliced pepperoni, cut into thin strips
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 green or red bell pepper, seeded, quartered and thinly sliced
1 onion, quartered then thinly sliced
2 cloves garlic, sliced
12 crimini mushrooms (baby portabellos), thinly sliced
Black pepper
1 (28-ounces) can crushed tomatoes
3/4 pound fresh mozzarella, thinly sliced
1/2 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
Loaf of crusty bread

Preheat broiler.
Bring a pot of water to a boil, add pasta and salt the water.

While the water boils combine ricotta, Parmigiano, parsley and pepperoni in a large bowl and reserve.

Heat a large skillet over medium heat with extra-virgin olive oil, 2 turns of the pan. When the oil is hot, add the peppers, onions, garlic and mushrooms. Saute 6 to 8 minutes until tender and mushrooms are dark. Season the vegetables with salt and pepper. Stir in tomatoes and reduce heat to low.

Add a ladle of starchy cooking water to the ricotta just before you drain the pasta. Drain pasta then toss with ricotta and pepperoni mixture. Pour pasta into a baking dish and top evenly with peppers, onion and mushroom sauce. Top with a layer of mozzarella, oregano and red pepper flakes. Place under hot broiler and melt cheese until golden and bubbly. Remove and serve with crusty bread.


Coffee Sambuca Shakes

1/2 cup cold regular or decaf coffee
2 to 3 tablespoons half-and-half or cream
2 shots sambuca liqueur
3 scoops coffee or vanilla ice cream
Whipped cream
Chocolate covered coffee beans, for garnish, optional

Combine coffee, half-and-half or cream, liqueur and ice cream in blender and process until smooth. Pour shake into a tall glass and garnish with whipped cream and a few chocolate covered beans.

I have many - french black pepper steak, coquilles st jacques, mulligatawny soup, veal parmesan. But for a dinner party I would make Bananas Foster for dessert. Make and serve immediately and use very firm good vanilla ice cream. The worst is pouring the hot sauce over mushy ice cream. Try it before your party because it is very easy to do.

This does not have to flame- I never have. Just serve in very nice dishes fairly quickly before it starts to melt.

Bananas Foster
This famous dessert originated at Brennan’s, in New
Orleans, in 1951.

Serves 4
4 Bananas
4 Tablespoons Butter
? cup Brown sugar, packed
? teaspoon Cinnamon
? cup Dark rum
Vanilla ice cream

Melt the butter over low heat. Stirring constantly, add the
sugar and cinnamon. Cut the bananas lengthwise, and then in
half. Add the bananas and cook until just soft. Remove the
pan from the heat. Slowly add the rum. CAREFULLY return the
pan to the heat until it flames. Cook until flame goes out.
Place bananas over the ice cream scoops and spoon the sauce
over the top.

this is soooooo good!

use any veggies you like... i use the lite cream cheese and mayo... enjoy!

INGREDIENTS
2 (8 ounce) packages refrigerated crescent rolls
2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (1 ounce) package dry Ranch-style dressing mix
1 cup fresh broccoli, chopped
1 cup chopped tomatoes
1 cup chopped green bell pepper
1 cup chopped cauliflower
1 cup shredded carrots
1 cup shredded Cheddar cheese

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Roll out the crescent roll dough onto a 9x13 inch baking sheet, and pinch together edges to form the pizza crust.
Bake crust for 12 minutes in the preheated oven. Once finished cooking, remove crust from oven and let cool 15 minutes without removing it from the baking sheet.
In a small mixing bowl, combine cream cheese, mayonnaise, and dry Ranch dressing. Spread the mixture over the cooled crust. Arrange broccoli, tomato, green bell pepper, cauliflower, shredded carrots, and Cheddar cheese over the cream cheese layer. Chill for one hour, slice and serve
