Funny you should ask this. I have a specialty dish that I just LOVE, so does just about everyone that tries it. It absolutely wonderful! It's Fried Kasseri Cheese with Cucumber Sauce, served with baguette bread and/or sun dried tomato flat out bread. I wrote an article on how to make it at wikihow. Here's the link.

I don't eat cheese anymore, but when I did:
hot spinach dip with cheese, baked and served with tortillas and pita
or
any kind of baked pasta with a thick layer of cheese on the top
A cheese and brocoli dish. Its brocoli and cheese and stuffing baked until golden brown & bubbly. I serve this with fried chicken on the side YUM-O.

SAGANAKI
Brie En Croate
Instructions:
Yield: 5 servings
1 Brie round
1 Pasrty dough
1 Egg
2 tablespoon Milk
Completty enclose cheese in pastry. Make egg wash of egg and milk. Put brie on baking sheet with seam side of dough down. Brush with egg wash. Cut garnish of leaves, flowers, etc., from scraps of pastry and decorate top of Brie. Bake at 350F about 30 minutes or until golden brown.
Your Brie En Croate is ready. Good luck!
Place the cream cheese in a food processor with the chopped sage leaves. Blend. Line a 2-cup mold with a double thickness of cheesecloth. Arrange the whole sage leaves in a decorative pattern on the bottom of the mold. Add half the cream cheese mixture, then add shredded cheddar, smoothing out the layer and pressing it slightly. Add the walnuts, again pressing gently. Smooth the remaining cream cheese mixture over the walnuts. Fold the ends of the cheesecloth over the top of the torta mixture and press lightly. Refrigerate the mold overnight.
To unmold, fold back the top of the cheesecloth. Invert a serving plate on top of the mold and flip them over together. Lift off the mold and carefully remove the cheesecloth. Garnish the torta with walnut halves.
Your Cheddar, Sage, and Walnut Torta is ready. Good luck!
