Recipe for chocolate muffins useing self rising flour,without chocolate chips?thanks?!


Question: This is one I use at times,Just use your self rising flour and omit the soda....
Lots of chocolate here....

Chocolate Chocolate-chip Muffins


Ingredients
Flour – 1 1/4 cups
Whole-wheat flour – ? cup
Baking Soda – 1 tsp
Salt – 1pinch
Cocoa – ? cup
Yogurt – 2/3 cup/thick
Milk – 4 tbsp
Eggs -3 / small
Butter – ? cup (100gms), at room temp
Sugar – ? cup
Vanilla essence – 1 tsp
Chocolate chips – ? cup (I like to use Ghirardelli dark chips)

Directions
Line a muffin pan (or grease and flour it)
Pre-heat the oven to 190Deg C
Sift the flour + whole-wheat flour +cocoa + baking soda + salt 3
times. Keep aside.
Stir together the yogurt + eggs + milk
In a big bowl, beat the butter + sugar + vanilla essence
Gently beat in the yogurt mix…gently, or it might splatter
everywhere!!
Stir in the sifted flour and chocolate chips until JUST MOIST.DO NOT
OVERMIX.
Sprinkle on any topping if desired.
Put into lined muffin pan and bake for 25 mins (approximately)
Test with a wooden pick to see if done.
Remove from pan immediately and cool on rack.
Can top with a buttercream icing/ganache…but they taste just fine as
they are.

6 1/3 tbsp butter, melted
2 1/2 cups self rising flour
1/2 cup cocoa
3/4 cup sugar
1 egg
1 1/3 cups milk
--Preheat oven to 375 degrees. Grease a 12 hole muffin pan (1/3 cup capacity). Combine all ingredients in a large bowl, stir with large metal spoon until just combined. Spoon mixture into prepared pan. Bake for about 25 minutes. Cool on a wire rack.

INGREDIENTS
1/2 cup butter or margarine, softened
1 cup sugar
2 eggs
1/2 cup sour cream
1/2 cup orange juice
2 tablespoons grated orange peel
2 cups self rising flour
3 (1 ounce) squares bittersweet chocolate



DIRECTIONS
In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in the sour cream, orange juice and peel. Combine the flour and grated chocolate; stir into creamed mixture just until moistened. Fill paper-lined muffin cusp three-fourths full.
Bake at 400 degrees F for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks

Chocolate Muffins

INGREDIENTS
1/2 cup butter
1/2 cup superfine sugar
2 eggs
1 cup self-rising flour
2 teaspoons cocoa powder
1 teaspoon baking soda

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease 6 cups in a muffin pan.
Cream together butter and sugar in a mixing bowl. Mix in eggs. Add flour, cocoa powder, and baking soda and blend thoroughly. Spoon batter into muffin cups.
Bake 15 to 20 minutes, or until a toothpick inserted into the center comes out clean. Cool and decorate.
