What is your favorite busy week-night recipe?!


Question: I am looking for some good recipes that are quick/simple to make that my family will love! We like everything except seafood and I LOVE cooking in the slow cooker! Thanks!

I have 2 go to busy night recipes. When my daughter is playing soccer and I know the schedule, its easy for me to put together in the crock pot and then start it in the morning.

chicken and dumplings
5 boneless chicken breasts, cut into bite size pieces
2 cans cream of chicken soup
small onion, diced
1 chicken bouillon cube

2 cans of biscuits

in the crock pot combine ingredients, except biscuits. cook on low for about 6 hours
30 Min's before serving cut up biscuits into pieces and add to mixture in crock pot, stir up . cook for another 30 minutes turning the crock pot to high setting. Serve.

crock pot enchiladas

1 lb ground beef cooked and crumbled
1 can cheddar cheese soup
1 can enchilada sauce
1 onion chopped
1 bell pepper chopped
1/2 small can of green chilies

combine the above ingredients and cook on low for 6-8 hours

Preheat oven to 350, add the filing to flour tortillas, roll up and put into greased baking dish
1 can cream chicken soup
1 package taco seasoning
mix these two together, and top the enchiladas with this sauce, top that with shredded cheese, bake until cheese is bubbly. These are wonderful!

I like beer and Taco's

Sloppy joe's,corn and french fries.
That's what I'm having after my daughter goes to karate.

Pulled pork in the crock pot is good also.

speghetti-- sooo easy. just boil the noodles, fry the meat, mix in tomato sauce and you're ready! it takes about 15 minutes TOPS.

Smithfield, Hormel, Armour have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Use this for your meat dish with a side dish or two of vegetables, rice, or potatoes. You will find these packages near the meat section, they are not frozen.

Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy, a vegetable, cranberry sauce, and Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.

You can buy a roasted chicken or two at your supermarket's deli section. They also have all types of salads and vegetables already cooked.

Another thing you can do is cook in a slow cooker or a crock-pot. You put the meat meal into the crock-pot in the morning and it cooks all day long. The meal is ready at dinner time. Be sure to read the booklet that comes with the crock-pot. Here are some recipes for you:

Just baked chicken

Hamburger Stroganoff
Brown hamburger meat with onion and bell pepper or poblano pepper add a carton of sour cream and a can of golden(or cream) mushroom soup.Heat through and serve over egg noodles. Super fast and Yummy.

**********3-BEAN HAMBURGER HOT DISH
1 lb. hamburger
3/4 lb. bacon
1/2 c. onion
2 cans Navy beans
1 can chili beans
1 c. ketchup
1/4 c. brown sugar
3 tbsp. vinegar
1 can kidney beans
Brown hamburger and onions; drain. Brown bacon crisp and crumble. Mix together all ingredients. Can be made in a crock pot, cooking for 4 to 9 hours or regular oven for 1 hour.

KING RANCH CHICKEN IN A CROCKPOT
3-4 c. cooked, diced chicken
1 pkg. (10-12) flour tortillas
1 med. onion, chopped
2 (10 oz.) cans cream of chicken soup
1 can (1 c.) tomatoes & chilies
4 tbsp. quick cooking tapioca
4 c. grated Cheddar cheese
In a large bowl mix chicken, soup, tomatoes, chilies and tapioca. Rip 2 to 3 tortillas into pieces and line the bottom of a 5 quart crockpot. Add 1/3 of the chicken mixture; top with 1/3 of the onion and cheese. Repeat layers of tortillas, chicken mixture, onion and cheese two more times. Cover; cook on low for 6-8 hours or on high for 3 hours. For a smaller 3 quart crockpot makes 1/2 recipe. This is a good take-in dish or potluck.

CROCK POT GARLICY CHICKEN

This is a simple chicken dish to make in your crockpot, but will fill up the hungry tummies at your dinner table.
Ingredients
1 1/2 lb. boneless, skinless chicken pieces
1 C. packed light brown sugar
2/3 C. vinegar
1/4 C. lemon/lime soda
2-3 Tbs. minced garlic
2 Tbs. soy sauce
1 tsp. ground black pepper
Directions
Place chicken in crockpot/slow cooker. Mix all remaining ingredients together and pour over chicken. Cook on low setting for 6 - 8 hours. Serve over rice or noodles.

pepper steak sliced steak, green pepper(sliced),1tbsp. brown sugar and 1/4c. soy sauce, boil in bag white rice, combine soy sauce and brown sugar into large bowl, add steak, encorporate. heat O.O. in skillet then add steak, mean while start boiling water for rice. brown steak on both sides, then add green pepper, reduce heat to low, place lid on and simmer until pepper is tender, and meat is cooked through.
My kids love this (minus the pepper) i still cook with it for flavor! so quick and yummy!

I make a quick pasta dish. 1 box of tricolor pasta, cook according to directions. 1/2 pound of deli ham sliced & diced,
1/2 cup parmasian cheese 1/2 cup of milk
Mix cheese & milk in with the drained cooked pasta. Add the ham. It's good with a salad & only takes as long as it takes the pasta to cook.
You can always add veggies. Broccoli, carrots or asparagus. Use diced chicken instead of ham. Plenty of variations & super simple.

This is super easy and quick.My children loved this when they were home.Cook a box of mac and cheese according to the direction.Brown a pound of hamburger.Add salt and pepper.Add any other seasoning you like,onions.green pepper,garlic.It is up to you what flavorings you add.When meat has browned add a can of diced tomatoes.Cook for 15 mins.Mix the meat mixture with the mac and cheese.Add more cheese on top if you want to.Add a simple salad and rolls and you have your meal.

I often will make vegetarian chili and leave it in the slow cooker all day.

I also like what Robin Miller from the FoodNetwork does- how she spends Sunday's in the kitchen to prep for her meals during the week. I havn't make any of her dishes, but the idea she has is a terrific one!

I know its probably not the best, but In my house "busy week-night meal" consists of TV dinner. The kids think its a treat to be able to pick out their own TV dinner at the store and then one night a week (usually when i'm running behind)we get them out and have dinner. They love it!
