Basmati rice is always good.

Try cous-cous. There are some great pre-flavored ones in the markets now that are really simple to prepare. If you take a stab at making plain cous-cous, try seasoning with butter, scallions, and sun-dried tomatoes.

These are always a hit at my house...

Ultimate Twice Baked Potatoes

INGREDIENTS
4 large baking potatoes
8 slices bacon
1 cup sour cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bake potatoes in preheated oven for 1 hour.
Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
Bake for another 15 minutes.

How about chicken marsala?

Take chicken breasts (I cut into strips), dredge in flour and sautee in a little butter and olive oil until browned on both sides...remove to plate

In the same pan, sautee some onions and mushrooms until softened. Add a can of store bought beef gravy (I know it sounds odd but it is fabulous) and marsala wine (1/4 to 1/2 cup). Bring to boil, return chicken to pan and cook until done.

Serve over pasta or rice.

Toss the chicken breasts with Southern Fried Shake & Bake & cook in the oven .

A simple rice _to every cup of minute rice add a chicken cube to the cup of water. Fry up green & red peppers, some onion to add to the cooked rice.

Cook some egg rolls & have a toss salad.

Cut into small strips and stir fry it.

Mix peas, carrots, corn and sultanas and cashews also go beautifully.

Serve on a bed of rice with a squirt of lemon or lime juice.

Make a Spanish Arroz con Pollo(chicken and rice). One of my favorite dishes to make for my family. Very easy and so flavor full.
