I always use a combo of ground beef, and ground pork. Using 2 different meats adds more flavor. You can use turkey, but try to add some veggies, like carrots, onion, peppers, celery..this will keep your meatloaf moist, since turkey is on the dry side.

Beef ,a hint for 2lbs of beef add 1/2 tsp of unflavored gelatin, it holds in the juice and does not affect the taste, it changes the molecular structure of the whole thing . ???? my Mom told me and it works. good luck.
We used to use beef all the time but have switched to ground turkey. We use it for just about everything you'd use beef for.

The best meatloaf I ever made was using a mixture of ground turkey and a little ground pork in a ratio of 3 to 1. The pork provided the moistness and flavour, while the turkey kept it pretty lean. When working with turkey I always add a little olive oil to keep the meatloaf from drying out and add more minced onion and celery.
Combining turkey and beef tends to make it heavy and the texture is 'funny'.
