Answers: Use old cheddar and a bit of dry mustard.
i use swiss and sharp cheddar. when i am making old fashioned i used parmesean cheese too.
Mustard and/or cayenne pepper.
The stronger/more mature the cheese the stronger the taste.
Try adding some english mustard to it as well!

You didn't say whether homemade or not, but I like adding several different cheeses: sharp cheddar, bleu, parmeggiano-reggiano, American for creaminess, and a teaspoon of Worcestershire sauce.
Deffintily milk, or try a different type of cheses to all add a sharp taste of their own flavor. Lastly, my secret ingrediant is pepper.....its sooo good.

Put a layer of chopped onions in the macaroni. Add dry mustard to the sauce and always use old cheddar.

Depends on if you are making home made mac n chz, or boxed kind. Extra sharp cheddar cheese should do the trick, but in boxed kind I don't think it would be good. Cracker Barrel brand is the strongest that I have tasted.

My husband and I both LOVE maci-cheese, but we make it from scratch and 'change it up' by adding any or all of the following:
horseradish ... just a bit (about one tablespoon for a LARGE casserole)
stone ground mustard ... again, about one tablespoon for a LARGE casserole
EXTRA SHARP CHEDDAR CHEESE (which is ALL we EVER use in our maci-cheese)
Gorogonzola ... it's an Italian 'blue' cheese with a wonderful flavor that adds real 'punch' to the maci-cheese.
Swiss cheese (Emmentaler is a good one to use, not the 'American' with holes, but you can use that too ... it's not quite as 'sharp' flavored, though)
As you get used to making it from scratch, you'll get 'better' and 'changing it up' and making it into a 'gourmet dish' ... but if you also cook the pasta ONLY to about 3/4 done, and make this with 'whipping cream' and not milk and mix the cheeses and all together before you put it into the oven to bake, it will come out BEAUTIFULLY. Many people add things like flour or corn starch, but we use ONLY cheese, cream, condiments, and the pasta ... if it's made properly it will come out as good or BETTER than any maci cheese you've EVER tasted. Use a Extra Sharp aged Chedder cheese, some dry Coleman's brand mustard and a bit of sour cream. I sometimes add Parmesan fresh grated too.

I usually make the Kraft Macaroni and Cheese Dinner according to the directions on the box.
Then....
Stir in 3/4 cups of Sharp cheddar cheese
And 3/4 cups of sour cream
Sprinkle about 1/2 cup more of the sharp cheddar on top and bake in the oven on 350 for about 20 minutes.
This has a very rich and cheesy flavor and tastes homemade.
